BROWN SUGAR CASHEW BARS

- Heat oven to 350°F. Grease bottom and sides of jelly roll pan, 15 1/2x10 1/2x1 inch, with shortening, or line with aluminum foil. In large bowl, mix 1/2 cup brown sugar, 2/3 cup butter, 1/2 cup corn syrup, 1 teaspoon vanilla and the egg with spoon. Stir in flour and salt. Spread in pan. Bake 18 to 20 minutes or until light golden brown.
- In 1 1/2-quart saucepan, heat 1/3 cup brown sugar and 1/3 cup corn syrup over low heat, stirring constantly, until sugar is dissolved. Stir in 1/4 cup butter and the whipping cream. Heat to boiling over medium heat; remove from heat. Stir in 1 teaspoon vanilla.
- Sprinkle cashews over crust. Pour cooked mixture over cashews; spread evenly. Bake 15 to 20 minutes or until light brown and set. Cool completely, about 1 hour. For bars, cut into 10 rows by 6 rows.

CASHEW COCONUT BARS RECIPE BY TASTY

Steps:
- Line an 8-inch (20 cm) square baking dish with parchment paper.
- Add the cashews, dates, coconut, salt, coconut milk, and vanilla to a food processor and pulse until the mixture starts to clump together.
- Transfer the mixture to the prepared baking dish and press into an even layer. Top with more coconut, if desired.
- Chill for 1 hour.
- Remove the bars from the baking dish by lifting the parchment paper. Cut into 12 individual bars.
- Serve immediately or store in an airtight container in the refrigerator for up to 1 week.

VANILLA-CASHEW BARS
A cashew lovers dream. I made a half recipe and baked that in a standard bread loaf pan for 18 mins. That gave me 12 nice sized bars of about 3/4 inch tall. I also want to say that I got cake bars, lol. Dreamy soft cake bars, your result might be different but I thought that you should how mine came out. It's delicious too!

- Preheat oven to 350 °F.
- In large bowl, beat sugar, butter and sour cream with electric mixer, until smooth.
- Stir in eggs, one at a time, and vanilla.
- Gradually beat in flour and baking powder with electric mixer on low speed. Add cashews and mix well.
- Pour into buttered 13- x 9-inch cake pan.
- Bake for about 25 minutes or until toothpick inserted in centre comes out clean.
- Remove from oven and set aside.
- Spread cake with Amaretto Icing.
- Cut into squares.
- Serve warm or cold.
- AMARRETTO ICING:.
- In bowl, combine icing sugar, cream and Amaretto, mixing with fork.
- Add a little more liquid if needed, until preferred consistency.
- Mix well until smooth and creamy.
- Reserve.

- Preheat oven to 300°F (149°C). Line an 8 or 9-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
- Using a rubber spatula or wooden spoon, mix the honey, vanilla, almond meal, salt, and almond butter together until combined. Fold in the cashews, dried blueberries, dried cranberries, and sunflower seeds until combined.
- Transfer mixture to prepared baking pan and press very firmly into an even layer. You really want it packed in tight- as tight as possible. Bake for 22 minutes. Remove from the oven and allow to cool completely in the pan set on a wire rack for 1 hour, then transfer to the refrigerator to chill for 1 more hour. This firms up the bars which helps them stay compact. Remove bars from the pan using the overhang on the sides and cut into bars. Individually wrap each bar in plastic wrap or parchment. Store at room temperature for 1 week or in the refrigerator for up to 2 weeks. I find they get a little sticky at room temperature over a few days, so I prefer the refrigerator.
