HOW TO MAKE VEGGIE STOCK WITH KITCHEN SCRAPS RECIPE BY TASTY
Here's what you need: onion, celery, carrot, mushroom, garlic, potato, parsley, water

Steps:
- Remove the tops/bottoms/skins/stems from any vegetables you are preparing (avoid vegetables like Brussels sprouts, broccoli, or cauliflower as they will add a bitter taste to your stock) and place them in a ziplock bag - they can stay frozen up to 6 months.
- Note: You can add many other vegetable scraps (think sweet!) - i.e. corn cobs, winter squash, zucchini, and other squash, beet greens, fennel, chard, lettuce, parsnips, green beans, pea pods, bell peppers, eggplant, mushrooms, asparagus, and herbs like dill, thyme, parsley, cilantro, and basil.
- Continue like this until bag is full.
- Dump bag into pot and fill ¾ of the pot (or until scraps just start to float) with water.
- Bring water to a boil and then let it simmer for at least 30 minutes.
- Strain water out of stock.
- Refrigerate stock up to 4 days, or freeze up to 3 months.

Steps:
- Combine 4 1/2 cups flour, soup mix, and soda in a large mixing bowl; add butter and egg, beating at medium speed with an electric mixer until blended.
- Add buttermilk, beating well.
- Stir in enough remaining 1 cup flour to form a soft dough. Turn dough out onto a lightly floured surface, and knead 4 or 5 times.
- Divide dough into fourths; roll each portion into a 10 x 12-inch rectangle (about 1/16 inch thick). Cut into 2-inch squares, using a pastry wheel or pizza cutter, and place on lightly greased baking sheets. Prick with a fork and sprinkle with salt.
- Bake at 400° for 12 to 15 minutes or until golden. Transfer to wire racks to cool completely.

- Add the flour, nutritional yeast, Italian seasoning, salt, garlic powder, black pepper, and baking powder to a food processor and pulse several times to combine. Add the water and olive oil and pulse, stopping the sides as needed until everything is mixed and you have a crumbled dough.
- Dump the dough crumbles onto a clean work surface and gather together with your hands to form a ball of dough. Use a rolling pin to roll the dough out as thinly as possible (about 1/16" thick). They will puff up and get a bit thicker once baked. I find it helpful to peel up the dough and rotate it a few times while rolling it out to help get it thin.
- Use a pizza cutter or sharp knife to cut the dough into a grid pattern making crackers that are about 1 1/2" square. Use a fork to prick each cracker 2 - 3 times, this will stop them from getting large bubbles when baking. Peel up each cracker and place on the prepared baking sheets, making sure the crackers don't touch. Re-roll any leftover dough scraps and cut more crackers until all the dough is used up.
