Steps:
- In a pitcher, combine the Simple Syrup, vodka, lime juice, and club soda. Pour into ice-filled glasses and garnish with mint sprigs.
- In a small saucepan, over medium heat, combine the sugar, water, and mint leaves. Bring to a boil, reduce the heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using, pressing on the mint leaves to extract as much syrup as possible.

Steps:
- Bring the water to the boil in a large pot.
- Reduce the heat to moderate, add the sugar and stir until it dissolves completely.
- Reduce the heat to low and simmer for 10 minutes until the mixture has a syrup consistency.
- Add the vodka, mix well and cool.
- Transfer to a jar or container and reserve for use.
- In a tightly sealed container, Vodka Simple Syrup keeps indefinitely, though it may begin to crystallize over time.
- If it crystallizes, simply warm the container in a pot of slow-simmering water.
