SWEET POTATO WALDORF SALAD

I came up with this recipe when I promised to bring a potato salad to a picnic but had no regular potatoes on hand. The sweet potatoes were there, so I revised my regular potato salad recipe and a new dish was born! Adding the apples was an inspired touch, and the dish was a hit.-Lois Jeffery, Chesterland, Ohio

Sweet Potato Waldorf Salad image

Steps:

  • Place sweet potato in a small saucepan; add water to cover. Bring to a boil. Reduce heat; cook, covered, until just tender, about 20 minutes. Drain and cool completely. , Peel potato and cube; combine with next five ingredients. In another bowl, combine mayonnaise, sour cream and lemon juice; pour over salad, and gently toss. Refrigerate, covered, at least 1 hour. If desired, serve on lettuce.

JENNY'S SWEET WALDORF SALAD

I couldn't ever find the perfect Waldorf salad - one that wasn't too mayonaise-y tasting, yet one that still held enough of the original flavor to be called a Waldorf. So I mixed and matched and experimented, and finally came up with a perfect twist on the classic Waldorf Salad recipe. Now I get requests for it at every family get together!

Jenny's Sweet Waldorf Salad image

Steps:

  • In a large bowl, combine the Granny Smith apples, Red Delicious apple, Asian pear, celery, almonds, golden raisins, grapes and cranberries. In a separate bowl, stir together the yogurt, white sugar, brown sugar, mayonnaise, lemon juice and cinnamon. Pour the dressing over the fruit mixture and stir gently until evenly coated.

Waldorf Sweet Potato Salad image

Steps:

  • Toast walnuts in oven at 350 degrees until golden, about 10 minutes. Cool. Place walnuts, sweet potatoes, apple celery, grapes and blue cheese (if desired) in a large bowl.
  • To make dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.

Steps:

  • 1. Toast the walnuts in oven at 350 degrees until golden, about 10 minutes (watch carefully). Cool nuts. Place walnuts, sweet potatoes, apple, celery, grapes and blue cheese in a large bowl.
  • 2. To make the dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.

1/3 c walnuts

Sweet Potato Waldorf Salad image

Steps:

  • Wash & peel the sweet potatoes, (Sometimes I peel 'em, sometimes I don't!) then cut them into 1-inch cubes & put them in a vegetable steamer.
  • Steam over boiling water 10 to 15 minutes or until tender but still firm. Set them aside to cool.
  • Scrub the apples, then core & cut them into 1-inch cubes. Put the cubed apples in a container with a lid, then add the lemon juice & sugar, tossing to coat the apples.
  • In a large bowl, combine the raisins, nuts, salt, sweet potatoes & apples.
  • In a small bowl, mix the yogurt & mayonnaise to make a dressing, then toss the dressing with the sweet potato-&-apple mixture before chilling & serving.

Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens.   • Peel apple and cut into halves. Remove core and slice halves 1/4-inch thick. Reserve 4 slices. Cut remaining slices into thin strips.
