WALNUT BROWNIES

I LEARNED to make these brownies in 1957 in home economics class. They were the first goodies I'd ever baked by myself. Now, 40 years later, I still make a batch occasionally. The recipe calls for basic ingredients on hand in most every kitchen, and the rich chocolate flavor is delicious. -Lorraine Silver, Chicopee, Massachusetts

Steps:

  • In a small bowl, cream shortening and cocoa; beat in egg, sugar and vanilla. Combine dry ingredients; gradually add to creamed mixture. Beat on low speed until thoroughly combined. Stir in walnuts. , Pour into a greased 8x4-in. loaf pan. Bake at 350° for 15-20 minutes or until a toothpick inserted in the center comes out clean.

Steps:

  • In a bowl, combine the brownie mix, eggs and vanilla. Fold in the walnuts and chocolate chips. Pour into a greased 13x9-in. baking pan. Bake at 350° for 35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

GOOEY WALNUT BROWNIES

Does 'zaar really need _another_ Brownie recipe? Probably not but this is a wonderful old recipe from the Edith Hansen cook book. It gives a chewy, dense brownie with an old fashioned flavor. Be careful to not overbake it. The original recipe calls for "part lard if desired" which I have left in as part of the recipe's charm but I always use margarine. Frosting these is gilding the lilly so I don't.

Steps:

  • Cream shortening and sugar well.
  • If chocolate squares are used, melt and add to creamed mixture. If cocoa is used, sift together with the flour and the salt.
  • To creamed mixture, add beaten eggs, vanilla, flour, salt and nuts with some of the flour shaken over them.
  • Bake in a greased and floured 9 x 13" pan in a 350°F oven until it shrinks from the edges of the pan (about 25 to 30 minutes).
  • Let cool and cut into squares.

  • Preheat oven to 350 degrees F. Brush an 8-inch square baking pan with oil. Line with parchment, leaving overhang. Brush parchment with oil. Melt half of chocolate in a heatproof bowl; whisk in oil, sugar, and syrup. Remove from heat. Whisk in eggs, one at a time, then cocoa, baking soda, and salt. Fold in flour and remaining chocolate.
