SPINACH WITH RAISINS & PINE NUTS

This iron-rich green is a healthy choice as a side dish- serve with fruity raisins and olive oil, and a little contrasting balsamic vinegar

Spinach with raisins & pine nuts image

Steps:

  • Heat the oil in a large pan, add the pine nuts and fry until golden. Add the raisins and fry briefly, then add the spinach leaves and turn in the pan over a fairly high heat until the leaves are just wilted. Sprinkle in the balsamic and seasoning, warm through and serve straight away.

WARM ROBIOLA CHEESE WITH PINE NUTS, OLIVES AND GOLDEN RAISONS image

Steps:

  • Mix together peppers, pine nuts, olives, raisins, oregano and olive oil. Let stand for 30 minutes. Meanwhile, let cheese stand at room temperature. Preheat oven to 375 degrees. Bake cheese in an ovenproof serving dish until just starting to melt around the edges, 5 to 7 minutes. Top with relish. Garnish with oregano. Serve immediately. To reheat, place cheese in oven for about a minute if it starts to set.

1/2 cup chopped roasted red peppers
2 tablespoons pine nuts, toasted
2 tablespoons chopped oil-cured black olives
2 tablespoons chopped golden raisins
1 tablespoon chopped fresh oregano
1 tablespoon olive oil
