TUNA WITH WASABI SAUCE

Wasabi mayonnaise can be found in the Asian section of your local supermarket. Wasabi, an Asian plant similar to horseradish, has a fiery flavor. Add some plain mayonnaise to make a milder sauce.

Tuna with Wasabi Sauce image

Steps:

  • In a large resealable plastic bag, combine the teriyaki sauce, vinegar and oil; add tuna. Seal bag and turn to coat; refrigerate for up to 1 hour. Meanwhile, in a small bowl, combine the mayonnaise, onion and lemon juice until blended. Refrigerate until serving. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill tuna, covered, over medium heat or broil 4 in. from the heat for 5-6 minutes on each side or until medium-rare or until slightly pink in the center. Serve with wasabi sauce.

Tuna Burgers with Wasabi Mayonnaise image

Steps:

  • Place vinegar and sugar in small bowl. Slowly whisk in 2 tablespoons olive oil to form an emulsion; season with salt and pepper; set aside.
  • Place tuna, scallions, soy, 2 tablespoons olive oil, sesame oil, and lemon zest in a large bowl; season with salt and pepper. Mix well, using your hands, to combine. Divide tuna mixture into six equal portions and form each portion into a 1/2-inch thick patty.
  • Place a large nonstick skillet over medium heat and add enough canola oil to coat bottom of skillet. Add patties, and cook until medium-rare, 2 to 3 minutes per side.
  • Place arugula in a large bowl, drizzle with reserved dressing, and toss to combine. Divide arugula evenly between 6 plates. Place one patty on each bed of arugula; serve immediately with wasabi mayonnaise.

1 tablespoon unseasoned rice-wine vinegar

Grilled Tuna Burgers With Wasabi Mayonnaise image

Steps:

  • MAKE THE BURGERS:.
  • Place tuna, cilantro leaves, mayonnaise, and mustard in a food processor. Pulse 5 or 6 times or until coarsely ground.
  • Add breadcrumbs, shallots or green onions, fresh ginger, soy sauce or tamari, and pepper, and 1 or 2 times, to combine.
  • Form 4(1" thick)patties, chill 1 hour.
  • Grill burgers over medium-high heat, about 3 minutes on each side to desired degree of doneness. Remove from grill; cover loosely, and let rest 3-4 minutes.
  • WASABI MAYONNAISE:.
  • Combine all ingredients in a small bowl and stir to blend. Refrigerate in airtight container until ready to serve.
  • ASSEMBLY:.
  • Serve on toasted challah bread with Wasabi Mayonnaise, avocado, cucumber or tomato slices, and watercress.
  • Enjoy!

Wasabi Tuna Burger With Thai Style Cucumbers image

Steps:

  • Cucumbers:.
  • Combine all cucumber ingredients in a sealable plastic storage container. Chill for two hours.
  • Tuna Burgers:.
  • Remove any sinew from the tuna and chop into fine dice. Add the scallions, ginger, mustard, soy sauce and pepper and blend thoroughly. Do not over mix. Form into 4 equal portions and make patties. Chill for 1 hour.
  • While the tuna patties are chilling, mix the wasabi powder with just enough water to make a paste. Allow to sit for 20 minutes. Add it to the mayonnaise and lime juice and chill.
  • Heat a skillet and add about 2 tablespoons of the peanut oil. Cook the tuna burgers until just done, about 4 minutes per side.
  • Place a piece of lettuce on the bottom of each bun and top with a few slices of cucumbers. Top with tuna burger. Then top with the bun top which has been spread liberally with Wasabi Mayonnaise. Serve with the remaining Thai Style Cucumbers on the side.
  • The preparation time does not include the chilling time.
