TURKEY SAUSAGE PATTIES
I found this recipe on 3fatchicks.com. These sausage patties are really good and my husband and I really liked them. The flavor is really nice with all the spices. Plus they are healthier than your typical sausage patties. A nice alternative when trying to eat well! Enjoy!

Steps:
- Combine all ingredients, except chicken broth, in a large mixing bowl.
- Mix well, add chicken broth and mix again.
- Form into 8 patties.
- Spray a nonstick skillet with cooking spray and cook patties until desired doneness. (I like mine extra browned!).

- Combine turkey and dry spices in large bowl. Mix together thoroughly.
- Add chicken broth, mixing well. Let stand 15-20 minutes.
- Form turkey into 8 patties, approximately 3/4 inch thick.
- Cook patties in non-stick skillet over medium heat 7-8 minutes on each side or until thoroughly cooked.
- •Variations:.
- Hot and Zesty: Add 1 tsp chili powder, 1/2 tsp cayenne pepper and 3 tbsp tomato paste.
- Italian: Add 1/2 tsp marjoram, 1/2 tsp coriander and 1/2tsp rosemary.

These low-fat homemade turkey sausage patties are simple to prepare and can be refrigerated or frozen. Be sure to buy ground turkey with some fat in it, ideally 93 percent lean, because some fat is needed to achieve that rich sausage essence. Besides, even with that much fat, the meat qualifies as lean.

Steps:
- Whisk together the fennel seed, sage, salt, pepper, thyme, garlic powder and allspice in a small bowl.
- Place the turkey in a medium bowl, then sprinkle the seasoning blend over it.
- Use your clean hands or 2 forks to gently work the seasoning into the meat, being careful not to overmix.
- It's OK if they are not absolutely evenly distributed throughout.
- Form the mixture into 8 (3 inch) patties. May be refrigerated to meld flavors or frozen for future use.
- Heat half the oil in a medium skillet over medium high heat. Once the oil shimmers, add half the patties; cook until nicely browned on the outside and cooked through, about 3 minutes per side.
- Transfer to a plate; repeat with the remaining oil and patties.

- Add sausage and stir frequently until no longer pink 5-6 minutes.

- In a large bowl, combine the first 7 ingredients. Crumble turkey over mixture and mix well. Shape into twelve 3-in. patties., In a large cast-iron or other heavy skillet, cook patties in oil in batches over medium heat until meat is no longer pink, 3-5 minutes on each side. Drain on paper towels if necessary. Freeze option: Place patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to a resealable freezer container.
