BLACK WALNUT CAKE

My mother's family members all were excellent cooks and known for their great hospitality. A longtime family favorite, this old-fashioned cake was always expected at holiday dinners, special occasions and potlucks.

Steps:

  • In a bowl, toss walnuts with 1/4 cup flour; set aside. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla; mix well., Combine the baking powder, salt and remaining flour; add to the creamed mixture alternately with milk. Stir in the reserved nut mixture., Transfer to a greased and floured 10-in. tube pan. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a heavy saucepan, combine sugar, egg whites, water and cream of tartar. With a portable mixer, beat on low speed for 1 minute. Continue beating on low speed over low heat until frosting reaches 160°, about 9 minutes., Pour into the bowl of a heavy-duty stand mixer; add vanilla. Beat on high speed until frosting forms stiff peaks, about 7 minutes. Frost the cake.

Steps:

  • 1. Preheat oven to 350° Mix butter and sugar together, then add eggs one at a time. Sift flour and baking powder together. Add flour mixture and milk to sugar and butter mixture, alternating flour and milk. Add walnuts last. Pour into greased and floured pan. Bake at 350° for about one hour or until toothpick comes out clean. Let cool, then add the glaze, pour slowly, small amounts at a time.
  • 2. Add all ingredients. Bring to a boil, stirring occasionally. Cook for one minute. Remove from heat, let cool, then pour over cake.

Steps:

  • Preheat oven to 350°. Line bottoms of 3 greased 9-in. round baking pans with parchment; grease parchment., Cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Add vanilla and eggs, 1 at a time, beating well after each addition. In another bowl, whisk together flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating after each addition. Fold in walnuts., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., For frosting, beat butter and cream cheese until smooth. Beat in vanilla. Gradually beat in confectioners' sugar and enough buttermilk to reach spreading consistency., Spread 1 cup frosting between cake layers. Spread top of cake with an additional 1 cup frosting. Spread remaining frosting in a thin layer over side of cake. Top with additional walnuts and, if desired, orange slices.

I got this recipe from an old Army mess hall sergeant who later became a chef down in Savannah, GA. This is a wonderful, different nut cake. It is equally good served warm or cold. This cake can be wrapped and frozen 3 to 5 months. Thaw, and if desired, reheat to serve.

  • Preheat the oven to 350 degrees F. Grease a 10- or 12-inch cast-iron skillet with oil and set aside.
  • Combine the flours, baking powder, flax meal, cinnamon, baking soda and salt in a mixing bowl, and stir with a fork or whisk until well combined. Add the maple syrup, sparkling water, vanilla and oil and stir well with a fork to combine.

Steps:

  • Melt butterscotch morsels in water; cool.
  • Sift together flour, salt, soda and baking powder; set aside.
  • Add sugar gradually to butter, creaming well.
  • Blend in eggs, one at a time, beating well after each.
  • Blend in melted butterscotch morsels, mix well.
  • Add dry ingredients alternately with buttermilk beginning and ending with dry ingredients. Blend thoroughly.
  • Fold in black walnuts.
  • Turn into two (9-inch) round layer pans well greased and floured lightly.
  • Bake at 350 degrees for 30 minutes or until done. Cool.
  • Filling: Combine sugar and cornstarch for filling in 2 quart pan. Stir in milk, water, butterscotch and egg yolk. Cook over medium heat. Stirring constantly, until thick.
  • Remove from heat and add butter, coconut and black walnuts. Cool.
  • Spread butterscotch filling between layers and on top to within 1/2-inch of edge.
  • Frosting: Cream butter in bowl with wooden spoon until very soft. Slowly add sugar, mixing thoroughly; add a drop of milk at a time as mixture gets too stiff. Flavor with 1/4 teaspoon vanilla.
  • For chocolate butter icing, add 1/2 ounce melted chocolate. The yolk of one egg will make yellow icing. Strong coffee instead of milk will make mocha icing. Using, of course, only one flavor at a time.
  • Frost with Butter Frosting around sides and on top of cake to meet the filling.
