CHILI CASSEROLE

A simple casserole with a little zing! The zing comes from the taco sauce. This is a great dish for when you do not have much time to make dinner, but you want something that has substance and will fill you up! You can use any kind of cheese on top.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, saute the beef and onion for 5 to 10 minutes, or until meat is browned and onion is tender; drain fat. Add the celery, chili, tomatoes, taco sauce and corn. Heat thoroughly, reduce heat to low and allow to simmer.
  • Meanwhile, prepare the noodles according to package directions. When cooked, place them in a 9x13 inch baking dish. Pour the meat mixture over the noodles, stirring well. Top with the cheese.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes, or until cheese is completely melted and bubbly.

  • Drain well.

  • In a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in the remaining filling ingredients; set aside. , For crust, in a large bowl, combine the flour, cornmeal, sugar, salt and baking powder. Fold in 1/2 cup cheese. Cut in butter until mixture resembles coarse crumbs. Stir in milk and egg. , Spread crust mixture over the bottom and up the sides of a greased 9-in. square baking dish. Pour filling into crust. HEARTY WESTERN CASSEROLE

This recipe comes from the Fix it and Forget It Cookbook. As written, it would not have turned out! For starters, 1hour on low did nothing to heat it. Second, it barely made 4 servings, so be warned. Third, you had way more biscuits than actual servings. But the flavor mix had potential, so that's why I'm posting it. I'd recommend playing with ingredient amounts and varied seasonings.

  • Combine browned beef, corn, beans, soup, cheese, milk, onion, and chili powder in slow cooker.
  • Cover. Cook on Low 1 hour (Cook actually on High, check now and then).
