WESTERN NOODLES

This is a recipe that my mother used to feed her family of 5 children. I'm sure it is economical, but itis also very tasty and easy! The "Old Hickory Smoked Salt" is a MUST. (The noodles cook while the sauce is being prepared, which makes the total time to make this dish about 15 minutes.) Add a green salad and you have a very nice meal.

Western Noodles image

Steps:

  • Bring a large pot of water to a boil; add noodles and salt the water. Cook until al dente. Drain.
  • Dice the bacon into 1 inch pieces; set aside.
  • Dice the onion into 1/2 inch pieces; set aside.
  • Slice the celery into 1/4 inch slices; set aside.
  • In a large saute pan, cook the bacon until slightly crisp.
  • Remove the bacon with a slotted spoon and drain on a paper towel lined plate.
  • Remove all but 1 tablespoon of bacon drippings.
  • Add the onion and celery and saute until the onion is translucent.
  • Add the tomatoes by squishing them through your fingers. (This is the fun part - this creates an irregular, coarser texture. This is a good way to get your kids involved.).
  • Simmer vegetables for about 5 minutes or until sauce thickens slightly.
  • Add back the bacon pieces and heat thououghly.
  • Adjust the seasoning with pepper but do not add salt.
  • Dish up the noodles into pasta bowls (or dinner plates).
  • Ladel sauce on top.
  • Pass the smoked salt for each to add to their own preference.

1 lb bacon
1 large onion
3 celery ribs
1 (28 ounce) can whole tomatoes
smoked salt (to taste)

SIMPLE WOK NOODLES

This is a fantastically versatile recipe. When im serve it as a side dish, i leave it plain and simple, but it can be easily turned into a tasty supper with the addition of a little meat or some more vegetables - i sometimes throw in some left over cooked chicken or pork or handful of cooked, peeled prawns.

Simple Wok Noodles image

Steps:

  • Cook the noodles in a large pan of boiling water.
  • Heat the sunflower oil in a wok and when good and hot, stir fry the mushrooms for 2 minutes.
  • Add the salad onions and cook for a further 1 minute.
  • Add the soy sauce.
  • Drain the noodles thoroughly and add to the wok with the been sprouts, a little salt and the sesame oil.
  • Cook for 2-3 minutes, stirring continuosly, until piping hot and well mixed, but don't over the cook the bean sprouts- they should still be crunchy.
  • Serve immediately with some extra sot sauce for splashing over.

Slow-Cooker Thai Peanut Noodles image

Steps:

  • Place the chicken and onion in a 4-qt. slow cooker. Combine salsa, peanut butter, bean sauce and soy sauce; add to slow cooker. Cook, covered, on low until chicken is tender, 2-1/2 to 3-1/2 hours., Meanwhile, prepare pasta according to package directions. In a large skillet, heat oil over medium-high heat. Add mushrooms; cook and stir until tender, 6-8 minutes. Drain pasta; stir into slow cooker. Stir in mushrooms. If desired, sprinkle with green onions.
