Pasta with Creamy White Beans image

Steps:

  • Bring a large pot of water to a boil. Season well with salt. Add the pasta and cook for 3 minutes less than indicated in the package directions, about 7 minutes. Drain well reserving 1/2 cup pasta water.
  • Heat a large skillet over medium-high heat until hot. Add the oil, carrot and onion to the skillet. Season with 1 teaspoon salt and cook, stirring often, until fragrant and beginning to soften, about 3 minutes. Add the pepper flakes and thyme and cook another minute. Stir in the drained beans and chicken broth. Reduce the heat to medium to maintain a simmer and cook for 5 minutes, stirring occasionally. Use the back of a spoon to gently mash some of the beans. Set aside.
  • Add the cooked pasta to the sauce. Sprinkle the grated cheese over the pasta and toss to coat well. Stir in the remaining 1/2 teaspoon salt and add the 1/2 cup pasta water as needed to maintain a creamy, broth-like sauce. Sprinkle in the spinach and cook until wilted.

Steps:

  • Cook& drain pasta.
  • Cook onion and sausage over med-high heat 2-3 minutes until onion is tender.
  • Gently stir in pasta and remaining ingredients except cheese.
  • Cook 3-5 minutes or until hot.
  • Sprinkle each serving with cheese.

2 cups uncooked rigatoni pasta
1 large onion, chopped
1 (16 ounce) package smoked sausage, cut in 1/2 " pieces
1 (16 ounce) can cannellini beans, rinsed & drained
1/3 cup oil-packed sun-dried tomato, drained and chopped

  • Heat the oil in a medium saucepan over medium-high heat. Add the leeks, celery, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the vegetables are softened and just starting to caramelize, 5 to 6 minutes. Stir in the garlic until softened, about 1 minute. Add the rigatoni and white wine and cook, stirring occasionally, until the wine has almost evaporated and is thickened, 2 to 3 minutes.
  • Add the lemon juice, 1 1/2 cups water, 1/2 teaspoon salt and a few grinds of pepper and stir to combine. Cook, stirring frequently, until the liquid has almost evaporated and the pasta is al dente, 14 to 16 minutes. Add the lemon zest, peas, mozzarella, Parmesan, heavy cream, capers, rosemary, thyme, 1/2 teaspoon salt and a generous amount of pepper and cook, stirring, until the cheese is melted and the peas are warm, about 2 minutes. Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Toss tomatoes, garlic, oil, vinegar, oregano, salt, and pepper together in a 9x13-inch metal baking pan.
  • Roast in the preheated oven until tomatoes are shriveled, about 20 minutes. Remove from the oven, stir in navy beans, and return to the oven to heat through, about 5 minutes more.

  • The first thing you want to do is get your pasta water boiling. Fill a large pot (preferably around 8 quarts) with approximately 6 quarts water, then put it over high heat.   • While the water comes to a boil, prep your other ingredients. Remove 3 links sausage from its casings and set aside. Dump 1 can beans into a strainer or colander and rinse well. Shake off excess water. Turn out beans onto a couple of sheets of paper towel and pat dry with a few more paper towels. Strip kale leaves off the thick woody ribs and tear into small pieces; discard ribs. Finely grate 2 oz. Parmesan using the small holes of a box grater. Set aside about ½ cup cheese for garnishing.
  • Heat 2 Tbsp. oil in a large Dutch oven or large skillet, preferably with straight sides, over medium-high. It’s best to use a vessel with high sides, because you’re about to do a lot of tossing and flinging when the pasta goes in, and this will minimize spillage.
