WHOLE WHEAT GINGERBREAD
Gingerbread is an old favorite because it's simple to make. I learned that pioneers served gingerbread with meals, but now it's considered a dessert! Serve hot or cold, with a dollop of whipped or ice cream.

- In a large bowl, beat molasses, honey, oil and eggs until well-mixed. Combine dry ingredients and add alternately with the milk to the egg mixture. Pour batter into a greased 13x9-in. baking pan. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Serve warm or at room temperature with chilled whipped cream.

This is a wonderful dark moist gingerbread, adapted from Recipes from the Old Mill, by Myers/Lind, a cookbook for baking with whole grains.

Steps:
- Cream butter, gradually add brown sugar and beat until fluffy.
- Add egg and beat well.
- Mix in molasses.
- Mix dry ingredients together, add gradually to mixture.
- Add boiling water and stir until batter is smooth, mixture will be thin.
- Pour into greased and floured 8" square baking pan.
- Bake at 350 degrees for 40-45 minutes, until edges are starting to pull away from pan and toothpick inserted in center of cake comes out clean.
WHOLE GRAIN GINGERBREAD CAKE
This is really good and relatively healthy. Serve it hot out of the oven with vanilla ice cream or whipped cream; it's also good with warm applesauce.

- 1. Preheat oven to 350 degrees Fahrenheit. Grease an 8-inch square pan with nonstick cooking spray (or line with parchment paper).
- 2. In a large mixing bowl, whisk together molasses, maple syrup, milk, coconut oil, egg, and vanilla. Add all remaining ingredients and stir just to combine.
- 3. Scrape batter into prepared pan, and bake for 16-20 minutes, or until cooked through (a toothpick inserted into the cake should come out clean, and the cake should spring back when gently pressed with your fingers).
- 4. While cake cooks and cools, make the frosting. If your cream cheese is not at room temperature, I recommend microwaving it in 5 second increments to soften it before proceeding, otherwise you may end up with lumpy frosting. Put soft cream cheese and heavy cream into the bowl of a stand mixer fitted with the whisk attachment, and whisk on medium-high speed until fluffy, stopping to scrape down the bowl as needed. Add maple syrup, vanilla, and salt, and whisk on high until soft peaks form (about 2 minutes). Transfer the frosting to the fridge to stay cold while the cake cools.
