VEGAN WHOLE WHEAT PANCAKES

These whole wheat pancakes are a time-tested hit in my house. You could easily make them nut free with soy or rice milk or gluten free with oat flour!

Vegan Whole Wheat Pancakes image

Steps:

  • Mix water and flaxseed meal together in a small bowl. Place in the refrigerator for 15 minutes.
  • Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl.
  • Combine 3/4 cup plus 2 tablespoons almond milk, coconut oil, and flaxseed mixture in a bowl. Add flour mixture and whisk until smooth.
  • Heat a griddle to medium-low heat and coat with cooking spray. Working in batches if necessary, add 1/4 cup batter to the hot griddle for each pancake and smooth to desired thickness. Cook until bubbles form, 3 to 4 minutes. Flip, and cook until golden brown, 2 to 3 more minutes.

WHOLE WHEAT VEGAN PANCAKES

This recipe came from adapting a few other recipes I had tried. These are light and fluffy, but still 100% whole wheat. A great way to treat your family to yummy pancakes while slipping in some healthy ingredients without them catching on. I like to add fresh blueberries or raspberries when in season.

Steps:

  • In a large bowl, add all ingredients except berries or nuts.
  • Mix lightly until combined. Do not over-mix.
  • Let mixture rest 5 minutes.
  • Fold in optional berries or nuts.
  • Cook on a greased griddle over medium heat until golden.
  • Serve with homemade syrup or jam.

  • To a large mixing bowl, add flaxseed and water and let set for a minute or two. Then add oil, maple syrup, baking soda, baking powder, and salt and whisk to combine. Add almond milk and whisk again until well combined.
  • Next add oats, whole wheat flour, and spelt flour and stir until just combined, being careful not to over mix. Let batter rest for 10 minutes while you preheat your cooking surface.
  • Preheat electric griddle to medium heat (or about 325 degrees F / 162 C), or a large skillet on the stove stop. You want the surface to be hot but not screaming hot – oil shouldn’t smoke when it makes contact with the surface.
  • Lightly grease your griddle with oil of choice and pour 1/4 cup measurements of the batter onto the griddle. There should be 6 pancakes (as original recipe is written // adjust if altering batch size). (If your batter looks too thick, thin it with a little more almond milk.) Flip when bubbles appear in the middle and the edges turn slightly dry, being careful not to burn.

In a 2-cup liquid measuring cup or another mixing bowl, whisk together the milk, oil, maple syrup and vanilla extract until thoroughly blended. (If your coconut oil solidifies on contact with the cold milk, gently warm it in the microwave just until it liquifies again.)
  • Pour the liquid mixture into the dry mixture. Stir until combined, so only a few lumps remain (don’t over-mix or your pancakes will be tough!). If you’d like to mix in any totally optional add-ins (like chocolate chips or blueberries), gently fold them in now. Let the batter rest for 5 minutes so your pancakes will be nice and fluffy.
  • Meanwhile, if you’ll be using an electric skillet, heat it to 350 degrees Fahrenheit. Otherwise, heat a heavy cast iron skillet or nonstick griddle over medium-low heat. You’re ready to start cooking your pancakes once the surface of the pan is hot enough that a drop of water sizzles on contact.
