- Thoroughly wash potatoes, cut in half, and slice into wedges.
- Toss wedges in olive oil and seasonings.

- Preheat an oven to 425 degrees F (220 degrees C).
- Place Parmesan cheese, olive oil, onion powder, garlic powder, pepper, salt, and potatoes into a resealable plastic bag. Seal the bag, then shake to coat the potatoes with the seasoning. Spread the potatoes over a baking sheet.
- Bake in the preheated oven until the potatoes are easily pierced with a fork, about 25 minutes.

- Heat the oven to 200C/180C fan/gas 6. Bring a large pan of lightly salted water to the boil. Cut the potatoes into chunky wedges, then boil in the water for 7 mins. Drain and leave to steam dry for 5 mins.
- Spread the wedges out on a large baking sheet or two smaller ones. Toss with the oil and 1 tsp salt (preferably sea salt) and spread out so that they aren't overlapping. Roast for 30 mins, turning halfway until golden and crisp.

WICKLEWOODWENCH'S WICKED WEDGES
I love anything coated in cheese, and have tried and loved other recipes but I think this recipe combines all my favourite flavours in a healthier alternative to chips or fries (depending on your side of the Atlantic) I prefer to use my own seasoning mix #440608, however, ordinary salt and pepper will be fine ... According to my daughter (and the rest of the family) these potato wedges are "wicked",,,hence the title.

Steps:
- Preheat the oven to 200c and pre heat a dry shallow baking tray.
- Cut the potatoes into wedges and spray with olive oil.
- Microwave on high power for 5 minutes.
- Meanwhile mix all the other ingredients together in a large bowl.
- Add the potatoes and mix well ensuring all wedges are coated.
- Spray the preheated baking tray with olive oil.
- Spread the wedges over tray and lightly spray once more.
- Bake in oven for 30 mins turning occasionally.
