Steps:
- Preheat the oven to 350 degrees F; spray a 9-by-13-inch pan with nonstick cooking spray.
- Stir together the chocolate-hazelnut spread, flour and eggs in a medium bowl. Pour into the prepared pan and spread the mixture to the edges.
- Bake until the surface looks set and slightly crisp, about 25 minutes. Let cool slightly, then cut into squares and enjoy!

- Preheat oven to 350F (325F if you're using a dark pan).
- In a large mixing bowl, stir together the cocoa and baking soda. Stir in 1/3 cup of the coconut oil until smooth. Add the boiling water and stir until the mixture is smooth and thick.
- Add the sugar, eggs, the remaining 1/3 cup coconut oil, vanilla and salt and stir just until smooth.
- Add the flour and stir until just combined.
- Spread the batter into your prepared baking dish and bake for 25-35 minutes, or until the edges start to pull away from the pan. (Always better to under-bake than to over-bake brownies!).

Steps:
- Preheat oven to 350°. Grease a 9″x 13″ baking pan.
- Melt butter, half of the chocolate chips, and usweetened chocolate in a double boiler (or microwave).
- Let mixture cool to warm.
- Whisk sugar, eggs, and vanilla just until mixed. Over-mixing will cause crumbly brownies.
- Fold in warm chocolate mixture.
- Whisk flour, baking powder, baking soda, and salt.
- Fold dry ingredients into chocolate mixture until just combined.
- Stir in remaining chocolate chips and nuts (if using), mixing just until combined.
- Pour batter into prepared pan.
- Spread to an even thickness.
- Bake 32-36 minutes.
- The edges will be slightly firm and the center will be soft when they are fully baked. Do not overbake.
- Cool completely in pan on wire rack.

SIMPLY FUDGY BROWNIES
I have been searching for years for the perfect brownie recipe (according to me). This is one I have tried from my Best of Country Cooking Cookbook collection. Not so much fudgy, but very chocolatey! I have to double or triple this recipe for my family because the original recipe amount will not last a whole day around here. I bake them on the low end of the cooking time.

- In a small bowl, combine cocoa, applesauce and oil until smooth. In another bowl, beat eggs.
- Add the sugar, vanilla and cocoa mixture. Stir in flour and salt just until moistened. Fold in walnuts.
- Pour into a greased 8-in. square baking pan; sprinkle with chocolate chips.
- Bake at 325 for 25-30 minutes.
- Cool on a wire rack.
- Yield: 16 brownies.

- Preheat oven to 350.
- Grease 9x13 inch baking pan.
- Melt butter.
- Stir in sugar, vanilla and eggs.
- Stir in flour, cocoa and salt.
- Stir in 1 1/2 cup chocolate chips and 1 cup pecans.
- Spread in prepared pan.
- Bake 35-40 minutes or until done.
- Heat milk and caramels in small saucepan over medium heat until caramels are melted and smooth.
- Melt remaining 1/2 cup chocolate chips and oil in small saucepan over medium heat until chips are melted and smooth.
- Drizzle caramel in a diagonal pattern across warm brownies.
- Drizzle chocolate in the opposite direction over brownies.
- Top with more chips and remaining pecans. ENJOY!

Steps:
- Preheat oven to 325°F with rack on the lower-middle level.
- Spray 8-inch square baking pan with non-stick spray.
- Cut a 16-x-8-inch sheet of foil into the pan and up and over two sides and roll up overhanging sides (you will use this as a handle to remove brownies after they are cooked).
- Spray the foil with non-stick spray as well.
- In small bowl, stir together the flour, salt and baking powder.
- In a medium-sized bowl, melt the chocolate and butter together (you can do this in microwave, or over a pan of simmering water).
- After the chocolate is melted, remove from the heat and whisk in the sugar and vanilla.
- Whisk in the eggs one at a time.
- Continue to stir until the mixture is completely smooth and glossy.
- Add the dry ingredients and stir until just incorporated.
- Stir in the nuts if you are using them.
- Pour the batter into the prepared pan and smooth the top.
- Bake until toothpick inserted into the center comes out with wet crums, 35 to 45 minutes (If the toothpick comes out clean, the brownies are overcooked).
- Cool the brownies in the pan on a wire rack fo 5 minutes.
- Using the foil handles, pull the cooked brownie from the pan and turn it out on the rack upside down, to cool completely, this will take nearly an hour.
- Cut the brownies into 16 squares.
- (Note: If you are not going to serve immediately, wrap the whole brownie in plastic wrap, then foil and refrigerae for up to 5 days or freeze).
