Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray 4 muffin cups with cooking spray.
- Mix flour, 1 tablespoon white sugar, baking powder, baking soda, and salt together in a bowl.
- Whisk milk, 2 tablespoons butter, and apple cider vinegar together in a small bowl. Pour over the flour mixture; mix until a soft dough forms.
- Dust a flat work surface with flour. Roll dough out to a 6x7-inch rectangle. Spread remaining 2 tablespoons butter on top.
- Mix remaining 1 tablespoon white sugar, brown sugar, and cinnamon in a small bowl. Sprinkle evenly over the buttered dough.
- Roll dough lengthwise into a log. Cut into 4 pieces using a sharp serrated knife. Place 1 piece in each muffin cup.
- Bake in the preheated oven until golden brown on all sides, 13 to 15 minutes.

YEAST-FREE BREAD ROLLS
My sister is not allowed to eat yeast and sourdough so she can't have regular rolls for breakfast. We were very happy when we found this recipe in a leaflet from "Dr.Oetker". The rolls taste very good and are very versatile. You can either have them with sesame, sunflower seeds, pumpkin seeds etc. if you want to put something hearty onto them. Or you can add some sugar and raisins to the dough and eat them with honey or jam.

- Preheat oven to 180°C.
- In a big bowl mix flour and baking powder. Add curd cheese, salt, milk and oil and quickly knead into a soft dough using the dough hooks of your hand mixer. Don't overmix or the dough will become sticky. Blend in desired ingredient (oats, sesame, seeds -- ) by hand.
- Shape dough into approximately 10 (big) rolls and place them on a paper-lined baking tray.
- Cut a cross into the top of each roll, brush with a little milk (approx. 3 tbs altogether) and sprinkle with whatever you like.
- Bake for about 20 minutes.

- Sieve flour with baking powder, baking soda, salt and seasoning.

This easy yeast roll recipe was given to me by my Great, Great Grandmother. I used it a couple of years ago in our state fair and received first place.

Steps:
- In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
- Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
- Preheat oven to 425 degrees F (220 degrees C).
- Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

BREAD ROLLS
I've tried many, many bread recipes, and this is the best roll recipe I've come across. It's super fast, super easy, and you'd have to try hard to mess it up. The easiest way to get the perfect temperature water for your yeast is to do 1 part boiling water to 2 parts cold. Perfect every time!

Steps:
- In a small bowl, mix milk with water. Add sugar, yeast, and butter. Stir until yeast is dissolved and set aside for 10 minutes or until yeast has foamed up a bit.
- In a large bowl, mix flour and salt. Use the lower amount of flour to start with and add more only if the dough is really too sticky.
- Add yeast mixture to flour and mix.
- Knead until smooth and elastic. (I use a hand mixer with a kneading attachment.).
- Place in greased bowl, cover tightly with plastic wrap, and let rise in a warm place for 15 minutes.
- Oil your hands and shape the dough into rolls and place in a well-greased pan. I use 2 round non-stick cake pans.
- Cover loosely with plastic wrap and let rise another 15 minutes.
- Bake at 400 for about 10 minutes or until golden brown.
- Let these cool down before you remove them from the pan or they will likely tear.

- Preheat the oven to 375 degrees Fahrenheit and spray a parchment paper-lined baking sheet with cooking spray or grease with butter.
- In a large mixing bowl, whisk together the sugar, salt, baking soda, baking powder, buttermilk, and butter together until incorporated. Note: it's totally ok if the mixture starts foaming!
- Whisk the flour into the liquids in 2 batches until no streaks of flour remain in the batter and the dough has formed a craggly mass. If the flour gets hard to whisk, switch to a wooden spoon or even knead with your hands (my favorite), working the final bits of flour into the dough.
- Cover your hands with flour and roll out 2 tablespoon-size pieces of dough into round balls. Re-flour your hands between rolling to keep the dough from sticking to your hands. Place the balls 2 inches away from each other on the pan.
