LIGHT BLUE CHEESE DRESSING

Light Blue Cheese Dressing image

Steps:

  • Whisk the yogurt, milk, mayonnaise, lemon juice, Worcestershire sauce and cayenne in a bowl until smooth. Gently stir in the blue cheese. Add 1/2 teaspoon salt, and black pepper to taste. Cover and refrigerate overnight to let the flavors develop.

1/2 cup low-fat plain yogurt
1 tablespoon 2% milk
1/4 cup mayonnaise
1 tablespoon fresh lemon juice
1/4 teaspoon Worcestershire sauce
Pinch of cayenne pepper
1/2 cup crumbled blue cheese
Kosher salt and freshly ground black pepper

Blue Cheese Salad Dressing image

Steps:

  • In a blender or small food processor blend together the garlic paste, the mustard, the lemon juice, the vinegar, and salt and pepper to taste. With the motor running add the oil and blend the mixture until it is combined well. Add the sour cream, 3/4 cup of the cheese, and 2 tablespoons water, or enough to obtain the desired consistency, blend the dressing until it is combined well, and transfer it to a bowl. Stir in the additional cheese. The dressing keeps, covered and chilled, for about 1 week.

1 large garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1 tablespoon Dijon-style mustard
2 tablespoons fresh lemon juice
2 tablespoons white-wine vinegar
1/3 cup olive oil
1/3 cup sour cream
3/4 cup crumbled blue cheese (about 3 ounces) plus additional to taste if desired

YOGURT BLUE CHEESE SALAD DRESSING

Zesty and satisfying while cutting back a little of the fat normally found in Blue Cheese Dressing. I really don't like "light" or "fat free" mayonnaise, so this was my solution to lighten up a favorite salad topper.
