ZESTY ITALIAN DRESSING SPICE MIX
Make two batches of this-one to have on hand for several batches of Italian Dressing and one to use as a seasoning for grilled or roasted chicken! From Down Home with the Neely's Cookbook.

Steps:
- In a small bowl, whisk together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt, and Cajun seasoning.
- Store the spice mix in a tightly sealed container, and use as needed.
- To make dressing, whisk together the vinegar, oil, water and 2 tbls. of the spice mix. Enjoy!
ZESTY ITALIAN DRESSING MIX
I use this mix often, it's better for you than the store bought packets.

Steps:
- 1. Combine all of the ingredients in a Ball/Kerr type glass jar and shake to combine. You can recycle one of the empty onion powder or garlic powder bottles as well.
- 2. To make dressing, mix 2 Tbsp mix with 2 Tbsp water, 1/4 cup vinegar (white or cider), 2/3 cup oil light olive oil and a sprinkle of lemon juice. Use the dressing right away or place in the frig for a couple hours to let the flavors mingle.
- 3. Or you can use this mix sprinkled on chicken, red potatoes, pork chops, etc. and bake in the oven.
- 4. Store the dry mix in an air tight container.
