SAUSAGE & BEAN ONE-POT

- Heat the oil in a large ovenproof pan, add the sausages and brown for few mins. Remove from the pan. Add the leeks and carrot and gently soften for 10 mins.
- Mix the breadcrumbs with a little sage. Heat grill to medium. Add 1 tbsp sage and the garlic to the pan. Cook for 1 min, then add the stock and tomatoes. Tuck in the sausages. Simmer for 10 mins until the sauce has reduced a little and the sausages are cooked. Season, stir in the beans, then simmer for 2 mins more. To serve, scatter the sage crumbs over the top and grill for 5 mins until golden.

- Butter a 3-quart casserole.
- Trim crusts from bread & cut into 4 squares.
- Line casserole with bread.
- Brown sausage & drain.
- Cut each link into 3 pieces.
- Combine eggs, sausage, cheese, mustard, & milk.
- Pour into casserole & refrigerate overnight.
- When ready to bake, mix evaporated milk & soup.
- Pour over casserole.
- DO NOT REMIX.
- Bake at 300F for 1 1/2 hours.
- Serve with fruit salad & muffins, if desired.

SAUSAGE & VEG ONE-POT

- Heat the oil in a large pan. Add the sausages, cook for a few mins until browned all over, then transfer to a plate. Tip the onion and fennel into the pan and cook for 10-15 mins until nice and soft, then add the garlic, half the chilli and the fennel seeds. Cook for a few mins more, moving everything around the pan now and then, to prevent the garlic from burning.
- Stir the flour into the vegetables, and cook for 1 min. Pour in the wine, let it bubble for 1 min, give everything a good stir, then add the stock and return the sausages to the pan, seasoning well. Cover, then gently simmer for 30 mins.
- Add the green beans, broad beans and peas, then cook, uncovered, for 2 mins more. Stir in the crème fraîche, lemon zest and juice, and herbs. Add a little more salt and pepper if it needs it, sprinkle with the chilli, then serve with plenty of bread for soaking up the juices.

- In a non stick skillet brown the potatoes in 4 tbs of olive oil until crispy, add salt and pepper to taste, remove and keep warm.
- In the same skillet add additional oil if needed and cook the sausage, bell pepper and onion until browned, remove and keep warm.
- Cook two eggs in a covered non stick skillet until set, season with salt and pepper.
- Place 1/2 potatoes and add 1/2 sausage mixture on two plates and top with the eggs.

- In a large saucepan, heat up the olive oil and toss in the bacon lardons and cubed chorizo. Fry for approximately 10 minutes over a medium heat until the fat has rendered down and everything has begun to brown.
- Use a slotted spoon to remove the bacon lardons and chorizo and put to one side in a bowl. Prick the pork sausages all over and fry in batches in the pan. You want to brown the sides of the sausages so don’t over-crowd the pan by cooking them all at once. Once the skins have browned, lift out of the pan and put to one side with the bacon lardons and chorizo.
- Dice the onion and toss into the pan with a pinch of salt. Stir around in the juices and cook over a medium heat for approx. 5 minutes. Meanwhile dice the peppers into cubes and crush the garlic. Once the onions have softened and begun to brown a little, throw the chopped peppers and garlic into the pan and cook for a couple of minutes.
- Add the red wine to the pan and stir to help dislodge the caramelised bits that are sticking to the bottom of the pan. This will all add flavour to the sauce. Pour in the tinned tomatoes, stock cube, paprika, ground cumin, tomato puree, Worcestershire sauce and the herbs. Stir well to combine.
