Steps:
- Place the water in a large bowl or mixer with a dough hook. Dissolve the yeast in the water. Add the remaining ingredients and mix on low speed until a ball is formed. Change to medium speed and mix approximately for 1 to 2 minutes until a smooth and elastic dough is formed. Remove the dough from the bowl, cut the dough into 2 portions, roll into tight balls and place in lightly oiled sheet pan, cover and let proof for a minimum of 4 hours.
- Preheat oven to 400 degrees F. When the dough is ready to be used, simply roll out with a rolling pin. Add the sauce and all of the toppings except the egg. Place the pizza in the oven for approximately 15 minutes until golden and crisp. Crack the egg on top of the pizza, place in the oven for an additional 5 minutes.
3 MEAT BREAKFAST PIZZA
We love pizza--even for breakfast. Feel free to add any of your favorite toppings too. This is very filling and great served with fresh fruit. Also super as a light lunch or supper. I will make a couple of these on the weekend and wrap individual wedges that the kids grab to pop in the micro and eat as they wait for the bus.

- Preheat oven to 400°F.
- In saucepan add water and milk.
- Whisk in gravy mix, and bring to a boil.
- Simmer 2-3 minutes, stirring constantly til thick.
- Cool slightly.
- In large skillet, melt margarine.
- Beat eggs with milk and add to skillet.
- Scramble eggs in skillet until set and in small chunks.
- Place crust on pizza stone or cookie sheet.
- Spread gravy evenly over the top.
- Sprinkle meats over gravy.
- Sprinkle eggs over meats.
- Salt and pepper to taste.
- Sprinkle cheese over eggs evenly.
- Bake at 400°F for 10-15 minutes until bubbly and cheese is melted and browning.
- Cool slightly and cut into wedges.

JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA
This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

- To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
- Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
- Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
- To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
- To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

- Preheat oven to 400°. Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. pan. Prick thoroughly with a fork; brush with 1 tablespoon oil. Bake until lightly browned, 7-8 minutes., Meanwhile, whisk together eggs and water. In a nonstick skillet, heat remaining oil over medium heat. 3-MEAT PIZZA
This pizza started out with me cleaning out the fridge and finding that I had a little of this and a little of that but not a lot of anything. This just may have turned out to be the best pizza yet. Hope you enjoy!

- 1. NOTE: You can use already made pizza crust, frozen or homemade pizza dough. Cooking time can and will vary depending on the pizza dough you select. Be sure to follow instructions for baking your pizza based on the dough you selected to use. I used a homemade dough and the directions are based on the dough I used.
- 2. Preheat oven to 425 degrees.
- 3. Stretch or press dough out onto a large pizza pan. I used a 16-inch round pizza pan. NOTE: I stretched this dough by turning in a circular motion as I let it hang freely from my (oiled) hands. I found the hard way that rolling out a dough will only make it tough.
- 4. Spread a thin layer of pizza sauce over dough. (NOTE: don't over do it with the pizza sauce or dough will be soggy). Then start layering your favorite toppings. I loaded this pizza with 3 meats, peppers, onions, olives, mushrooms and thinly sliced tomatoes and then topped with shredded mozzarella cheese.
- 5. Bake for 20 minutes or until crust is golden brown around the edges.
- 6. DIRECTIONS FOR PIZZA DOUGH USING BREAD MACHINE: Place ingredients in pan of bread machine in the order they are listed.
- 7. Select 1-lb setting and then select dough cycle and start your machine.
- 8. Once machine has finished it's work, oil hands and stretch dough by allowing the dough to hang from your hand while turning it slowly in a circular motion. Once the appropriate size or close to size you need, lay onto pizza pan. Press edges out as needed to fit your pan. If you are already a pro with pizza and can toss, then toss your pizza dough. I've not mastered that yet!
- 9. NOTE: do not roll out the pizza dough or you will have a tough dough.
BREAKFAST PIZZA

- Preheat the oven to 425 degrees F. Cook the bacon in a large nonstick skillet over medium heat until the fat is rendered and the bacon is crisp, about 8 minutes. Remove using a slotted spoon to a paper-towel-lined plate. Add the onions to the bacon drippings and cook until very soft, about 10 minutes. Add the sun dried tomatoes, oregano and garlic. Cook until fragrant, about 2 minutes.
- Brush the flatbread with some of the sun-dried tomato oil, and then spread the onion mixture on the flatbread. Sprinkle with the bacon and provolone and spoon the ricotta in large dollops over the surface. Place the pizza in the oven and bake until the edges of the flatbread are crisp and the cheese is melted and lightly browned, about 10 minutes.
- Meanwhile, wipe out the skillet used to cook the onions. Heat the skillet over medium heat and add the oil. Carefully break the eggs into the skillet, sprinkle with salt and pepper and cook until the whites are set, 4 to 5 minutes.
- If using lavash, cut the pizza into 4 pieces. Place a fried egg on each piece. Scatter the torn basil leaves over the top and serve immediately.

- Make the salsa: Combine the whole tomatoes with their juices, diced tomatoes, cilantro, onion, garlic, jalapeno, sugar, cumin, 1/4 teaspoon salt and the lime juice in a food processor or blender. Pulse several times until it reaches the consistency you like. Set aside.
- Prepare the pizza: Place the oven rack in the lowest position and preheat to 475 degrees F. Fry the bacon in a large skillet over medium heat, turning occasionally, until chewy, about 8 minutes; drain on paper towels. Chop into bite-size pieces.
- Meanwhile, heat 1 tablespoon vegetable oil in a separate large skillet over medium-high heat; add the frozen hash browns and cook, stirring occasionally, until they just start turning golden brown, about 7 minutes. Remove from the pan and set aside. In the same skillet, fry the red and green peppers in the remaining 1 tablespoon vegetable oil over
- medium-high heat until they're nice and brown, about 5 minutes. Set aside.
- Roll out the pizza dough on a lightly oiled baking sheet. Spread 1/2 cup salsa over the dough, then evenly distribute the sliced mozzarella over the salsa. Sprinkle with the hash browns, bell peppers and bacon.
- Next comes the fun part! Make 8 little wells in the filling here and there all over the surface of the pizza; crack the eggs into the wells. Sprinkle with salt and pepper to taste. Bake until the crust is golden brown and the eggs are set but still slightly soft, about 15 minutes. Cut into large pieces and serve with the remaining salsa.

- Brown breakfast sausage in a large skillet until no longer pink and the meat is crumbly, about 10 minutes. Drain excess grease and set sausage aside.

- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x12-inch baking sheet with cooking spray.
- Cook the bacon in a large skillet over medium heat, stirring often, until the bacon is browned and crisp, about 10 minutes. Remove bacon pieces with a slotted spoon, and drain on paper towels.
- Open up the cans of biscuits, separate the biscuits, and arrange onto the prepared baking sheet so they touch. Press the biscuit dough down to seal them together into a crust that covers the baking sheet.
- Bake in the preheated oven until the crust is slightly cooked and very lightly browned, about 5 minutes. Do not overbake. Remove from oven.
