MOIST, TENDER SPICE CAKE
This is a substantial yet tender spice cake that's flavorful enough to serve unadorned.

Steps:
- Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
- Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
- Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

- In a bowl, cream sugar and butter. Add eggs; beat well. Combine dry ingredients; add to creamed mixture alternately with buttermilk. Mix well. Pour into a greased and floured 13-in. x 9-in. baking pan. Bake at 350° for 35-40 minutes or until the cake tests done. Cool. For frosting, cream shortening and butter in a bowl. Add vanilla. Gradually beat in sugar. Add milk; beat until light and fluffy. Frost cake.

- 1. Preheat oven to 350F (175C). Butter and flour 3 (8 inch) round cake pans.
- 2. In a small mixing bowl whisk together cake flour, baking powder, baking soda, nutmeg, cinnamon, ginger and cloves.
- 3. In a large mixing bowl, with an electric mixer mix the butter, sugar and salt until light and fluffy. Beat in the eggs, 1 at a time, beat well after each egg is added. Beat in the dry ingredients and the buttermilk alternately.
- 4. When the batter is well mixed and smooth, divide it into the 3 cake pans and bake approximately 25 minutes or until a toothpick inserted in the center comes out clean. Let cool for 10 minutes.
- 5. While waiting for the cakes to cool make the butter cream: Beat the butter, shortening and salt together until creamy. Add half the confectioner's sugar and beat until fluffy (5 minutes). Combine vanilla extract and heavy cream. Gradually beat in the remaining confectioner's sugar alternating with the cream mixture until light and fluffy.
- 6. If the cake layers have domed a little slice off the tops with a long serrated knife so they are flat and even.
- 7. Place the first layer cut side down on whatever you're going to serve it on. Spoon about 3/4 cup of butter cream onto the center of the cake layer. Spread it to the edges. Repeat with the remaining layers. Garnish the top with nuts and cocoa powder

5 MINUTE SPICE CAKE IN MICROWAVE
Inspired by Recipe#361967, I experimented and made up this cake for the two of us. I did try it with twice as much baking soda and baking powder, reduced them both to 1/8 as the cake touched the microwave "ceiling" and started to curve down; tasted fine but sure looked bizaar. Think it needs these ingredients to get a cake texture. I doubt that this recipe can be reduced and work out. Thank you especially to debbwl and diner524 for trying to help me improve this recipe for two.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, cinnamon, baking soda, cloves and nutmeg; add to creamed mixture alternately with buttermilk. , Pour into two greased 9-in. round baking pans. Cool 10 minutes before removing from pans to wire racks to cool completely., In a heatproof bowl of a stand mixer, whisk egg whites, sugar, water and cream of tartar until blended. Place over simmering water in a large saucepan over medium heat. Whisking constantly, heat mixture until a thermometer reads 160°, about 2-3 minutes., Remove from heat; add vanilla. With the whisk attachment of a stand mixer, beat on high speed until stiff glossy peaks form, about 7 minutes. Spread frosting between layers and over the top and sides of cake. Store frosted cake, uncovered, in refrigerator.

This was printed in an Arm and Hammer ad that appeared in several magazines during the early 1950s. It's a delicious cake and the praline frosting is great, but takes a bit longer than 3 minutes to prepare.

- Heat oven to 375°F.
- Beat together eggs and sugar for one minute.
- Sift together cake flour, baking soda, salt and spices and mix into eggs and sugar.
- Combine the vinegar, milk and vanilla.
- Add 1/2 of liquid and the shortening to the mix and beat well.
- Add remaining liquid and beat 1 minute.
- Pour mixture into two, greased cake pans bake for 25-30 minutes.
- Cool and frost with Praline Frosting (recipe follows).
- Praline Frosting:.
- Combine sugar, water, egg whites, corn syrup, and salt in the top of a double boiler and blend together. Place the blended mix over simmering water and and beat vigorously (with electric mixer) for 7 minuted or until stiff peaks form and keep.
- Remove from heat and mix in vanilla and pecans.
