Steps:
- Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup - you can also do this with a large pestle and mortar. Discard the lime peel.
- Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.

- Cut lime into 6 wedges. Squeeze the wedges into an old-fashioned glass, then add wedges. Add cachaça and sugar; use a spoon to muddle. Fill glass with ice, then stir well to chill.

43 CAIPIRINHA
Licor 43, or Cuarenta Y Tres, is a bright yellow liqueur made by Diego Zamora S.A. in Spain. It is made from citrus and fruit juices, flavored with vanilla and other aromatic herbs and spices, in total 43 different ingredients. It is 31% alcohol by volume at 62 proof. Licor 43 has gained increasing popularity within the last years and is more and more often used as an ingredient for a cocktail named "Caipirinha 43", in where it replaces the commonly used cachaca. Although the liquor is popular and available all over the globe, it is only recently that this liqueur is finding itself in regular liquor stores in the USA. Previously it was found in specialty shops and liquor stores of notable size. The history of this fine liqueur supposedly dates back to the ninth century B.C.E when Phoenician traders found Carthage. The culture that emerged soon found themselves noted for their libations. The Carthaginians were repeatedly invaded and overrun throughout history, but managed to hold onto the recipes of their liqueurs. One of these ancient recipes survived and ingratiated itself into the Spanish culture and was even present on the trans-Atlantic voyages of Columbus. The recipe contained forty three different citrus fruits, aromatic plants and other ingredients. It came to be known simply as 'Cuarenta Y Tres'.

- In a cocktail shaker, using a wooden spoon or a pestle, muddle the lemon slices with the sugar until juicy and the sugar dissolves.
- Add the Licor 43, rum and the crushed ice and shake for 10 seconds; taste and add more sugar if desired.
- Pour (do not strain) into an old-fashioned glass or tumbler, add more ice if needed and serve.

- Cut the lime in quarters then cut them crosswise.
- Put lime and sugar in a tall glass and mash with a pestle (or a wood spoon, rolling pin, etc).
- Add the same amount of liquor on the lime juice and stirr.
- Add ice and stirr again.
- Here in Brazil, the guys that sell it at the beach put another glass upside down over it, hold both with one hand and shake.
