BLUEBERRY AMARETTO DELIGHT

Steps:
- Preheat oven to 350 degrees.
- Combine first 3 ingredients.
- Press into a greased 9 x 13 pan.
- Combine eggs, 3/4 cup sugar and cream cheese in a medium mixing bowl.
- Beat till smooth with mixer.
- Spread over crumbs layer in pan.
- Bake for 30 minutes and cool.
- Combine milk, pudding, and 1/4 cup amaretto. Beat 2 minutes on low and spread over cream cheese layer.
- Combine 1 1/4 cup sugar and cornstarch in large pan.
- Gradually add 1/4 cup amaretto.
- Stir till smooth.
- Add berries and cook over medium heat stirring constantly till thick. Cool.
- Poor blueberries over pudding and chill. Before serving cover blueberry layer with Cool Whip.

Steps:
- In a large mixing bowl, combine flour and brown sugar.
- Cut in butter until mixture forms fine crumbs.
- Reserve 1 cup crumb mixture for topping. Press remainder over bottom of ungreased 8 inch square baking pan. Bake for 12-15 minutes at 350 or until lightly browned.
- In mixer bowl, thoroughly cream together cream cheese and granulated sugar. Add egg, amaretto, and vanilla; beat well. Spread batter over partially baked crust.
- Combine almonds with reserved crumb mixture; sprinkle over batter.
- Bake for 20-25 minutes. Cool and cut into squares.

- Melt the butter in a heavy skillet over medium high heat. Add the blueberries, salt and toss and turn cooking about 5 minutes. Add the Amaretto cooking another 5 minutes; the berries will begin to burst and juice. Add the preserves or jam and blend. Reduce heat to low or simmer and cook another about 20 minutes to let the sauce thicken somewhat. Ready to serve and use however you decide!
