SALTINE TOFFEE COOKIES
This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Line cookie sheet with saltine crackers in single layer.
- In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
- Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

- 1. LINE 13 X 9 INCH PAN WITH FOIL. SPRAY FOIL WITH COOKING SPRAY. PLACE 30 CRACKERS IN BOTTOM OF PAN.
- 2. IN A 2 QUART SAUCEPAN, MIX CONDENSED MILK, BROWN SUGAR, BUTTER AND MILK. COOK OVER MEDIUM HEAT UNTIL BUTTER IS MELTED, STIRRING FREQUENTLY. INCREASE HEAT TO MEDIUM-HIGH; HEAT TO BOILING. BOIL 5 MINUTES, STIRRING CONSTANTLY.
- 3. POUR ONE-THIRD OF THE CARAMEL MIXTURE OVER CRACKERS IN PAN. ARRANGE 30 MORE CRACKERS OVER CARAMEL. TOP WITH ONE-THIRD OF THE REMAINING CARAMEL MIXTURE. REPEAT WITH REMAINING CRACKERS AND CARAMEL.

- Heat oven to 350°F. Line 15x10x1-inch pan with foil. Spray foil with cooking spray. Place crackers in single layer in pan.
- In 2-quart saucepan, cook and stir butter, sugar and salt over medium heat until butter is melted. Heat to boiling, stirring frequently. Boil 7 to 9 minutes longer, stirring frequently, until light brown color. Remove from heat. Add vanilla; stir until blended. Immediately pour mixture evenly over crackers in pan; spread to cover.
- Bake 13 to 15 minutes or until bubbly and brown in color. Sprinkle chocolate chips on top of cracker mixture. Let stand 5 minutes. Spread chocolate evenly over cracker mixture.
