ASIAN SESAME SEARED OR GRILLED TUNA (GLUTEN FREE)
This is a combination of two fabulous marinades. My kids absolutely love it and ask for me to make it all the time! And, just by using a gluten-free soy sauce, the entire recipe is gluten free! Serve with wasabi paste and rice.

Steps:
- Whisk tamari, sesame oil, mirin, honey, vinegar, ginger, green onions, and garlic together in a bowl until marinade is evenly mixed. Place tuna steaks in the marinade and refrigerate for at least 1 hour.
- Spread sesame seeds onto a plate. Remove tuna from marinade and discard marinade. Press tuna into sesame seeds until evenly coated.
- Heat olive oil in a cast iron skillet over high heat until very hot; cook tuna in the hot oil until cooked to desired doneness, 30 seconds to 5 minutes per side.

- Coat a stove-top grill pan, griddle or skillet with cooking spray and preheat to medium-high. Season tuna steaks all over with salt and black pepper. Brush honey mustard all over both sides of tuna steaks. Press sesame seeds into both sides of tuna steaks. Grill 3 to 4 minutes per side, until medium (longer for fully cooked, fork-tender fish).

- If fish steaks are large, cut into 6 serving pieces. In shallow glass or plastic dish or resealable food-storage plastic bag, mix remaining ingredients except lime wedges. Add fish; turn to coat. Cover dish or seal bag and refrigerate, turning fish once, at least 1 hour but no longer than 24 hours.
- Heat coals or gas grill for direct heat. Remove fish from marinade; reserve marinade. Cover and grill fish about 4 inches from medium heat 11 to 15 minutes, brushing 2 or 3 times with marinade and turning once, until fish flakes easily with fork. Discard any remaining marinade. Serve fish with lime wedges.

- Wash and dry tuna, and squeeze juice from lime over both sides. Let tuna sit no more than 20 minutes.

- In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.

- Make the sauce. Stir-fry the scallions, ginger and garlic in the sesame oil for one to two minutes. Add the remaining ingredients and pour the sauce into a small bowl. Set aside.
- Meanwhile, preheat the grill. Sprinkle the tuna fish with olive oil on both sides and season with salt and liberal grindings of pepper. Grill the fish for two to three minutes on each side for rare, longer if you wish it more well-done. Serve with the sauce on the side.

- Make the marinade. Combine soy sauce, sesame oil, rice wine, honey, lime zest and juice, and cayenne pepper in a gallon resealable bag.
- Marinate the tuna steaks. Place your tuna steaks in the bag with the marinade and massage gently to coat all the steaks with the marinade. Refrigerate for 2-4 hours.
- Preheat the grill. Get your grill up and running at a very high temperature. You want to grill your tuna steaks at approximately 500 degrees F.
- Crust the tuna steaks. On a flat plate, mix together the white and black sesame seeds. Carefully remove one tuna steak from the marinade, allowing excess marinade to drip away back into the bag. Place the steak onto the sesame seeds and press down. Flip the steak gently to coat the other side. Use your hands to press sesame seeds onto the sides of the steak. Repeat with remaining steaks until they are all coated in sesame seeds.
