CRANBERRY STREUSEL SWEET POTATOES
Dotted with crimson cranberries, the streusel topping adds a crunchy touch to mashed sweet potatoes. All the sweetness comes from either the potatoes or cranberries, because no sugar is added.

Steps:
- Place sweet potatoes in 3-quart saucepan; add enough water to cover. Cover and heat to boiling; reduce heat. Simmer covered 20 to 25 minutes or until tender; drain. Shake potatoes in saucepan over low heat to dry.
- Heat oven to 350°F. Mash potatoes with 2 tablespoons butter and the salt until no lumps remain. Spoon into ungreased 1-quart casserole. Mix remaining ingredients; sprinkle over potatoes.
- Bake uncovered about 30 minutes or until heated through and streusel mixture is golden brown.

CRANBERRY STREUSEL SWEET POTATOES
Delicious sweet potatoes that are not especially sweet, and the streusel topping with dried cranberry mixture has a tart and sweet flavor. I was so excited to find a 6.5 pound bag of "USDA Organic" Sweet Potatoes at Sam's Club to use for this recipe - Great taste! A perfect side dish for the holidays or any time of the year.

Steps:
- 1. Place sweet potatoes in 3-quart saucepan; add enough water just to cover potatoes. Cover pan and heat to boiling; reduce heat. Simmer covered 10 to 15 minutes or until potatoes are tender when pierced with a fork; drain. Return potatoes to saucepan. Shake pan with potatoes over low heat to dry (this will help mashed potatoes be fluffier).
- 2. Heat oven to 350 degrees. Mash potatoes in warm saucepan and mix well with 3 tablespoons melted butter, 1 T. brown sugar, 1 t. cinnamon and 1/2 t. salt. Mix with potato masher or electric mixer on low speed until no lumps remain. Spoon into ungreased 1-quart casserole. Mix remaining ingredients; sprinkle over potatoes.
- 3. Bake uncovered about 30 minutes or until potatoes are hot and topping mixture is golden brown.
- 4. NOTE: You can make these potatoes a day ahead. Just follow the directions through Step 2, then cover and refrigerate up to 24 hours. Bake uncovered 45 to 60 minutes or until potatoes are hot and topping mixture is golden brown.

- Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain. When cool enough to handle, peel potatoes and cut into 1/4-in. slices. , Place half in a greased 2-1/2-qt. baking dish. Top with half of the cranberries, brown sugar and butter. Repeat layers. Pour orange juice over top. Cover and bake at 350° for 30 minutes. , In a small bowl, combine the walnuts, brown sugar and cinnamon; cut in butter. Sprinkle over sweet potato mixture. CRANBERRY STREUSEL SWEET POTATOES
Delicious, not especially sweet and simple! A great addition to your holiday table. I used 1/3 cup panko bread crumbs instead of the soft crumbs and it made a lovely crunch to the topping. You may make the sweet potato part the day before and then cook with streusel 30 minutes before serving.

- Preheat oven to 425° F. Pierce the sweet potatoes a couple times on the top and bottom with a fork.
- Bake sweet potatoes using your preferred method. If you don't have a preferred method, bake them directly on the middle oven rack for 45 to 50 minutes, until a fork slides in easily and potatoes are soft to the touch. Around the 30 minute mark, slip a piece of aluminum foil onto the rack directly below the sweet potatoes to catch any of the oozing juices. This will prevent the juices from burning on the bottom of your oven.
- While the potatoes bake, make the streusel. Mix the flour, cinnamon, brown sugar, and salt in a small bowl. Cut in the cold butter with 2 knives or a pastry cutter until the mixture is crumbly and the butter is the size of peas. Toss in the dried cranberries and pecans. Refrigerate until needed.
- After the potatoes are finished baking take them out of the oven, reduce the oven to 400° F, and allow the potatoes to cool for 5 minutes. Slice each potato open through the equator so you have 2 separated halves from each potato.
