APPLE CARDAMOM CAKE

Ready for a fresh fall dessert that's rooted in tradition? Pick this recipe for a simple scratch cake that might remind you of something Grandma used to make. Similar to a pound cake but with fragrant, sweet cardamom cutting through its rich buttery crumb. Sliced apples strewn across the top melt into the cake just slightly during baking for a pretty look that only needs a dusting of powdered sugar to be complete. The end result is an apple dessert that's not too sweet but incredibly flavorful. It's as perfect with a steaming cup of coffee at breakfast time as it is mounded with whipped cream after dinner. And since it's ready to serve in just over an hour, it's totally weeknight friendly!

Apple Cardamom Cake image

Steps:

  • Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In small bowl, mix flour, baking powder, 1/2 teaspoon cardamom and the salt; set aside.
  • In medium bowl, beat softened butter and 3/4 cup granulated sugar with electric mixer on low speed 30 seconds; increase speed to medium, and beat 2 to 3 minutes, scraping bowl occasionally, until light and fluffy. Reduce speed to low; beat in eggs, one at a time, just until smooth. Beat in vanilla. On low speed, beat in one-third of the flour mixture, then half of the milk, beating well after each addition, just until smooth. Repeat with flour mixture and milk, ending with flour mixture. Scrape side of bowl occasionally. Beat in sour cream until blended. Spread batter in pie plate.
  • Arrange apple slices over batter. In small bowl, mix 1 1/2 teaspoons granulated sugar and 1/8 teaspoon cardamom until blended. Sprinkle over apple slices.
  • Bake 30 to 34 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes.
  • When ready to serve, sprinkle powdered sugar over top. For 8 servings, cut into 8 wedges. Store covered at room temperature.

OLD-FASHIONED 1-2-3-4 CAKE

A 19th century recipe for yellow cake that's easy to remember and simple to make. It's also the basis for variations like coconut, orange, lemon, almond and spice cake. My son always requests it plain with chocolate buttercream frosting for his birthday.

Old-Fashioned 1-2-3-4 Cake image

Steps:

  • 1. Preheat oven to 350 F. Spread Crisco on the bottom and sides of cake pan(s) and dust with flour. Tap out excess.
  • 2. Cream butter, sugar, eggs, salt and vanilla in the large bowl of an electric mixer until very light and fluffy, about four minutes, scraping down the sides of the bowl frequently with a rubber spatula.
  • 3. Stir the baking powder into the milk, and with the mixer on low speed, alternately add the flour and milk, beginning and ending with flour.
  • 4. Bake 30 to 35 minutes for layers, slightly longer for the oblong pan, or until a wooden toothpick inserted in the center comes out clean and the cake springs back when lightly touched with your finger.
  • 5. Cool the layers in their pans on a wire rack for 10 minutes before turning out on the rack to cool completely. You can leave the oblong cake its pan to cool.
  • 6. When completely cooled, finish with your desired filling and frosting.
  • 7. VARIATIONS: Coconut: Before adding the flour and milk to the basic cake, stir in 1 cup shredded sweetened coconut and 3/4 teaspoon coconut extract. Frost cake with a coconut frosting. Orange: Stir in grated zest of 1 orange before adding flour and replace milk with orange juice. Bake cake in a 10-inch, greased and floured tube or Bundt pan. Almond: Add 1/4 to 1/2 teaspoon almond extract along with the vanilla. After frosting, sprinkle sliced almonds over the top.

3-2-1 CAKE

3 ingredients, microwavable, GOOD! I found this recipe somewhere, but I go to SO many recipe sites, I can't remember where. This is a VERY easy, VERY good, VERY quick, single serve cake! Your choice of flavors. I prefer Chocolate! The 3-2-1 comes from 3 tablespoons cake mix, 2 tablespoons water and 1 minute in the microwave. You can make it a little bigger by adding more cake mix and a little more water to cake battter consistency. I made this for the hubby and he loved it! Going to try other flavor cake mixes with it too. Made the chocolate cake and topped it with sliced sugared strawberries! Whipped cream, ice cream and toppings, even icing would be good toppers!

Steps:

  • Mix Angel Food cake mix and your choice flavor cake mix (I used devils' food).
  • Put both in zip lock bag and mix well.
  • When ready for your quick cake snack attack, take 3 tablespoons cake mix.
  • Put in microwavable small ramekin or bowl.
  • Mix in 2 tablespoons water; mix well.
  • Microwave on high, 1 minute.
  • Cool and top with whipped cream or icing of your choice or just eat it plain.
  • Just enough for that quick fix, snack attack!
  • Prep time includes opening and mixing the cake mixes in zip lock bag and measuring out mix and water and mixing together.
  • ENJOY!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In prepared pan, combine cake mix, oil, eggs, and water. Stir together until cake mix is moistened, breaking up any large lumps in the batter and spreading to cover bottom of pan. Spoon on pie filling to form strips evenly spaced over batter, but not too close to edge of pan. Gently fold batter over pie filling, creating a swirl pattern and spreading out to form an even layer.
  • Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • For the topping: Mix together the crushed pineapple and instant pudding. Refrigerate for 5 minutes, or until thickened. Fold in whipped topping, then spread over cooled cake. Keep refrigerated until ready to serve.

Steps:

  • Heat oven to 350 degrees. Arrange two racks in center of oven. Butter two 8-by-2-inch round cake pans; line bottoms with parchment paper. Dust bottoms and sides of pans with flour; tap out any excess.
  • In a large bowl, sift together flour, baking powder, baking soda, and salt.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter on medium speed until softened, 1 to 2 minutes. Gradually add granulated sugar, beating on medium speed until lightened, 3 to 4 minutes; scrape down sides once or twice. Drizzle in eggs, a little at a time, beating after each addition until batter is no longer slick, about 5 minutes; stop once or twice to scrape down sides.
  • On low speed, alternately add flour mixture and buttermilk, a little of each at a time, beginning and ending with flour mixture. Beat in vanilla and lemon zest.
  • Divide batter evenly between the prepared pans. Bake 25 minutes, then rotate the pans in the oven for even browning. Continue baking until a cake tester inserted into the center of each cake comes out clean, 10 to 20 minutes more. Transfer pans to wire racks to cool, 15 minutes. Turn out cakes; set on racks, tops up, until completely cool.
  • Remove the parchment from bottom of each cake. Using a serrated knife, slice each layer in half horizontally. Set aside the prettiest domed layer for the top of cake. Place another domed layer, dome-side down, on a serving platter. Spread 1 cup lemon curd over surface to within 1/2 inch from edges. Place second cake layer over the first, and spread another 1 cup curd over top. Repeat with third cake layer and remaining cup curd. Transfer partially assembled cake to the refrigerator.
  • Just before serving, place reserved dome on top of cake. Spoon sweetened whipped cream over the top. Sprinkle with mixed berries, and dust with confectioners' sugar through a fine sieve.

Steps:

  • Heat oven to 350°F. Grease bottom and sides of one 13x9-inch pan or two 8-inch or 9-inch round pans with shortening; lightly flour.
