- In a bowl, whisk the milk, extract and pudding mix for 2 minutes. Stir in coconut and lime zest if desired. In each of two 1-1/2-cup parfait glasses or dessert dishes, layer about 1/3 cup pudding mixture, 1/4 cup pineapple, 2 tablespoons almonds, 1/3 cup pudding mixture, 1/4 cup strawberries, 2 tablespoons almonds and remaining pudding mixture., Top with whipped cream. Sprinkle with the remaining almonds. Garnish with cherries.

- Put 2 tablespoons of yogurt in the bottom of each of four juice glasses. Top with 4 orange slices. Sprinkle the oranges with a 1 1/2 tablespoons of cereal, followed by 2 more tablespoons of yogurt. Top with diced pineapple then with another 1 1/2 tablespoons cereal.
TROPICAL FRUIT PARFAIT
Steps:
- In a small bowl stir together yogurt, lime juice, and cayenne pepper; set aside.
- Spoon 1/4 of drained fruit into the bottom of 2 wine or parfait glasses. Add 1/4 of the banana. Spoon 1/4 cup yogurt mixture over fruit and top with 1/4 cup of granola. Repeat layers.
- Serve immediately garnished with a sprig of fresh mint.
TROPICAL FRUIT PARFAIT WITH HONEY-GINGER DRIZZLE AND GINGERSNAP GRANOLA
Steps:
- For the parfait: Add the honey, ginger and 1/2 cup water to a small saucepan. Bring to a boil, stirring to dissolve the honey. Remove from the heat and let cool a bit.
- Remove the ginger and mix half of the syrup into the Greek yogurt; reserve the rest for drizzling on the fruit.
- Divide the kiwis, mangoes and papayas among 6 small wide-mouthed glasses or parfait glasses. Drizzle with the reserved syrup. Top each serving with a dollop of yogurt.
- For the granola: Toast the oats in a nonstick skillet over medium heat until light brown, about 3 minutes. Transfer to a baking sheet.
- In the same skillet, melt the butter with the maple syrup, brown sugar, ginger, cinnamon, allspice and salt. Add the oats back to the skillet along with the almonds and coconut; toss to coat. Serve the granola over the parfaits.
TROPICAL LIME PARFAITS

- For the crumb: Combine the graham cracker crumbs, sugar, butter, coconut chips and lime zest in a bowl. Mix to combine.
- For the filling: Using an electric mixer, beat the cream cheese, heavy cream, powdered sugar, coconut extract and lime zest and juice in a large bowl until light and fluffy.

- Cut off small ends of passion fruit. Scoop out pulp into mesh strainer placed over blender container. Press pulp with back of large spoon to extract juice into blender container. Add cream cheese and sugar to blender; blend until smooth.
- Spoon 1/4 cup pineapple chunks into each of 12 parfait or dessert glasses. Cover each with layers of 1 Tbsp. cream cheese mixture, 1/4 cup mangos, additional 1 Tbsp. cream cheese mixture and 1/4 cup papayas.
- Top each with 2 Tbsp. each COOL WHIP and pomegranate seeds.

- Blend the mango and kiwi. Leave it just a little bit chunky.
