VANILLA YOGURT AMBROSIA

This simple fruit salad is so yummy. I have served it many times, and it's always one of the first dishes to go. Fat-free vanilla yogurt also works well as the dressing. -Sherry Hulsman of Louisville, Kentucky

Vanilla Yogurt Ambrosia image

Steps:

  • In a serving bowl, combine the pineapple, oranges, grapes, marshmallows and coconut. Fold in the yogurt. Cover and refrigerate for at least 1 hour. Just before serving, stir in pecans.

Steps:

  • 1. DIRECTIONS 1 In medium bowl, mix yogurt and pineapple. Into each of 4 parfait glasses, place 1/4 cup of the cereal. 2 Spoon 2 tablespoons yogurt mixture on top of cereal in each glass. Top each with 1/4 cup cereal, then with 1/4 of the banana slices. 3 Spoon 2 tablespoons yogurt mixture onto banana in each; top each with orange segments. Spoon remaining yogurt mixture over orange segments. Sprinkle with coconut. Garnish with strawberries.. To toast coconut quickly in the microwave, spread it in a shallow microwavable bowl or pie plate. Microwave uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until golden brown. Treat someone special to breakfast in bed with this fruity parfait. Serve it with a steaming cup of coffee or tea and the morning paper.

3 containers (6 oz each) yoplait original 99% fat free french vanilla yogurt

Best Yogurt Parfait Ever image

Steps:

  • First, pour the yogurt into a bowl. Then add the cream and vanilla. With a whisk, carefully stir until combined. It should be nice and thick.
  • Sprinkle the brown sugar evenly over the top of the yogurt mixture. Do not stir the mixture. Cover the bowl with foil or plastic wrap and tightly seal the edges. Place in the refrigerator for at least 20 to 30 minutes.
  • When you are ready to serve, place a small handful of berries (or other fruit) into a bowl or cup. Without stirring the mixture, spoon the yogurt over the berries. There will be creamy areas and brown sugar areas. Repeat the layers once, ending with berries on top.

One 17 1/2-ounce container plain Greek yogurt
1/2 cup heavy cream

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

  • In a bowl, stir together the pineapple, oranges and cherries. Toss in half of the sweetened coconut and stir.
  • To make the yogurt whipped cream, add the cold heavy cream to the bowl of your electric mixer. Using the whisk attachment, beat it on high speed until stiff peaks form and you have whipped cream. Add in the yogurt and vanilla extract, and beat on medium speed, scraping down the sides if needed, until combined. Stir in the rest of the shredded coconut and the flaked coconut.
  • Layer the yogurt cream, the marshmallows and fruit mixture into four small jars or glasses. I like to do two or three alternating layers. Top it off with a cherry and an extra sprinkle of coconut if desired.
