ACAPULCO DIP
This is a recipe that my friends and I use to make when we watched Sunday NFL Football... I don't know where it came from but It's quick and easy and goes great with mexican cold beer! Enjoy....

Steps:
- 1. cut up cheese in 1/2 inch cubes and place in a bowl
- 2. Microwave: add 1/2 the jar to the cheese and place in microwave for 2 minutes, take out of the microwave stir, and place back for 2 more minutes... repeat until the cheese and the salsa blend into a cheesy sauce.. Add or minimize the amount of salsa for thickness...
- 3. serve with Chips...
- 4. Small Crockpot: follow step (1) and step (2) once its semi melted place in the small Crockpot, fix it to low temperature and stir keep stirring til smooth. follow step (3)
- 5. Note: when the cheese gets too dry, add 1 or 2 tablespoons of water to thin out the cheese, then place in microwave for a min or so.
QUESO BLANCO MEXICAN WHITE CHEESE DIP
This is a white dipping sauce served in many restaurants with chips or hot flour tortillas for dipping. This is a basic recipe that uses '"jack" for the Tex-Mex version and chihuahua and/or asadero for the more traditional Mexican version.

MEXICAN WHITE CHEESE DIP/SAUCE
This dip is similar to white cheese sauces served in many Mexican restaurants. The amount of heat can be adjusted by adding your favorite chili pepper or crushed cayenne pepper to taste. As is, it is kid-friendly, quick, and delicious! It can be used as a dip for tortilla chips or a sauce for many Mexican dishes.

- Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Add taco sauce; simmer until slightly thickened, 5-10 minutes., Cover the bottom of a 13x9-in. baking dish with 3 tortillas, tearing them into pieces as necessary. Layer half the meat mixture over tortillas; sprinkle with half the cheese. Layer with 3 more tortillas; spread with refried beans. Cover with sour cream; sprinkle with green onions and olives. Layer remaining tortillas over top; cover with remaining meat mixture and cheese. Bake until heated through, 25-30 minutes. Let stand a few minutes before serving. If desired, serve with chopped tomatoes and avocados.
