ACCIDENTAL VEGGIE TORTILLA PIZZA
I was making Tortilla Pizza for supper, had some ground turkey defrosted in the fridge for it. Had the whole wheat tortillas on the cookie sheet and put the sauce on, then the spinach, grated carrots, diced red pepper and diced tomatoes , topped them with the grated cheese and popped it in the oven. There we were eating and DH says, my gowd this is good but I can't see the turkey on mine HA HA!!! The ground turkey was still in the fridge, completely forgot to cook and put it on and we didn't even miss it ! Very tasty accidental Veggie Pizza

Steps:
- Preheat oven to 375f degrees and prepare a cookie sheet covered with tinfoil for easy cleanup.
- Place two tortilla on cookie sheet, split 1/4 cup mozzarella cheese in half and sprinkle on each tortilla, place a second tortilla on top of the cheese sprinkled ones. (I found that one tortilla is a little too "bendy"; sprinkling the cheese between keeps them together and gives more firmess to the tortilla crust).
- Spread half of the pizza sauce on each tortilla crust, sprinkle half of the cut spinach over the sauce, then half of the pepper, diced tomato and grated carrot over each.
- Combine the remaining mozzarella and cheddar and sprinkle half on each tortilla.
- Place cookie sheet on the middle rack of preheated oven and bake for approximately 15 minutes or until the cheese is melted and bubbling and crust edges are brown.

TORTIZZAS
Inspired by California Pizza Kitchen's now-discontinued Greek pizza, as well as the Manhattan bar Our/New York's also-discontinued tortilla pizzas (affectionately called "tortizzas" by the patrons who remember them), this quick lunch or light dinner builds on a sturdy base of crispy, cheesy flour tortillas. A fresh mix of cucumbers, tomatoes and avocado, mounded atop the tortillas, makes you feel like you're eating a salad with your hands. Feta delivers sharpness and creaminess, as does the simple garlicky yogurt sauce that drapes each tortizza. A drizzle of honey at the end might sound out of place here, but it really brings together all the flavors, and is a popular dipping sauce for pizza in South Korea.

Steps:
- Place racks in upper and lower thirds of oven and heat oven to 400 degrees. Line two large sheet pans with parchment paper.
- Toss the cucumbers, tomatoes and 1/2 teaspoon salt in a colander set in the sink and toss to combine. Let sit to drain excess liquid, about 10 minutes.
- Meanwhile, arrange the tortillas on the sheet pans, four per pan, and sprinkle each with the mozzarella and dried oregano. Bake until the cheese is melted and lightly browned, and the tortillas' edges are crispy but still pale, 8 to 10 minutes.
- While the tortillas are baking, make the yogurt sauce: In a small bowl or measuring cup, whisk together the yogurt, garlic, lemon juice, honey and the remaining 1 teaspoon salt.
- To serve, evenly divide the drained cucumbers and tomatoes among the tortillas. Top each with feta, avocado and parsley, and spoon the yogurt sauce over everything, leaving some back to serve on the side. As a final flourish, lightly drizzle the tortizzas with honey. You can eat these flat like mini pizzas or folded like tacos.
QUICK TORTILLA PIZZA
These pizzas are very family friendly. I use the small tortillas for the kids to make their very own individual pizzas, and large ones for me and my hubby to come up with our own creative masterpieces. My favorite is with sundried tomatoes, marinated artichoke, black olives and smoked provolone cheese.:-)Enjoy!!

- Working in batches, lay as many tortillas out as possible on the pizza stone without overlapping and bake for 10 minutes, or until just crispy. Repeat until all tortillas are crispy.
- Meanwhile, heat the black beans, paprika, cumin, and cayenne over medium heat until smooth and pliable (it doesn't need to be heated all the way through, just enough to make it easy to spread).
- Divide the black beans among the crispy tortillas (about 1/3 cup per tortilla), and use a rubber spatula to spread the beans out evenly to the edges.
