ADAM'S OLD FASHIONED EGG NOG
Steps:
- In a large bowl with a mixer, beat the egg yolks together with the sugar for approx 10 minutes (you want the mixture to be firm and the colour of butter). Very slowly, add in the bourbon and brandy - just a little at a time. When the bourbon and brandy have been added, allow the mixture to cool in the fridge Allow at least 4 hours for this. Once the mixture is fully chilled stir in the milk Stir in 1 & 1/2 teaspoons of ground nutmeg,one teaspoon of cinnamon and 1 tablespoon of vanilla extract or all the inside scrapings of the vanilla bean and discarding the outer protective shell of the bean. In a separate bowl, beat the cream with a mixer on high speed until the cream forms stiff peaks. In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg white mixture into the egg yolk mixture. Gently fold the cream into the egg mixture. After ladling into your cups, garnish with some nutmeg. Enjoy!

- Beat yolks in a very large bowl until thick and pale. Slowly beat in sugar. Whisk in milk and 2 cups cream. Mix in bourbon, rum, and Cognac. Cover, and refrigerate for up to 1 day.
- Just before serving, beat whites until stiff peaks form. Fold whites into eggnog. Whisk remaining 1 cup cream until stiff peaks form, and fold into eggnog. (Alternatively, you can fold half the whipped cream into eggnog, and top with remaining half.) Sprinkle with nutmeg.

- In a heavy saucepan, whisk together eggs, sugar and salt. Gradually add 4 cups milk; cook and stir over low heat until a thermometer reads 160°-170°, 30-35 minutes. Do not allow to boil. Immediately transfer to a large bowl., Stir in vanilla, nutmeg and remaining milk. Place bowl in an ice-water bath, stirring until milk mixture is cool. (If mixture separates, process in a blender until smooth.) Refrigerate, covered, until cold, at least 3 hours. , To serve, beat cream until soft peaks form. Whisk gently into cooled milk mixture. If desired, sprinkle with additional nutmeg before serving.

EGGNOG
Homemade eggnog is simple, a recipe for novices, as long as they can whisk. Where many eggnogs go wrong is that they rely more on cream than on alcohol. It's not a liquid dessert. It's a drink, whose coarse edges are muted with cream and eggs. "The Joy of Cooking" has a recipe that hits all the right points, some of them in excess. Made as is, the drinker is apt to experience a brief moment of jolly followed by blacking out. For my adaptation, I cut some of the cream with milk and cut back on the alcohol just a touch so one could finish a glass while still holding onto it.

- In an electric mixer or by hand, whisk together egg yolks and 3/4 cup confectioners' sugar until light, dense, and mixture forms a ribbon trail when whisk is lifted. While whisking, very slowly add 1 cup bourbon. Cover this mixture, and refrigerate for one hour.
- Whisk in remaining bourbon, then beat in cream and milk. Add 1/2 cup more milk if it is too thick. In another bowl, whisk egg whites with a pinch of salt, until fluffy. Slowly add remaining confectioners' sugar while whisking; keep whisking until whites are shiny and hold firm but not stiff peaks. Fold egg whites into egg yolk mixture.
- To serve, ladle eggnog into small cups - demitasse cups would work well - making sure to get some foam on each. Grate a little nutmeg on top of each.

My family has always made their own Eggnog for the Christmas Holiday for as long as I can remember. Its creamy, delicious and tastes better than the store bought kind in my opinion! The original recipe actually came out of the Betty Crocker Cookbook from 1956.

- 1. This drink mixes extremely well in a blender! Beat together 1 egg, well beaten 2 Tbsp sugar
- 2. Beat in 1 cup chilled rich milk (or if you dont have raw milk substitute with 3/4 cup milk and 1/4 cup cream) 1/4 tsp vanilla extract
- 3. Top with whipped cream sprinkle nutmeg on top.
