BUTTER RUM-GLAZED APPLESAUCE CAKE

Steps:
- Heat oven to 350°F. Grease bottom and sides of 8-inch square pan with shortening or cooking spray.
- In 1 1/2-quart saucepan, melt 1/3 cup butter over medium heat. Cook 2 to 2 1/2 minutes, stirring occasionally, until butter just begins to brown. Immediately remove from heat. Stir in granulated sugar, applesauce and vanilla.
- In large bowl, mix flour, baking soda, cinnamon and salt. Stir in applesauce mixture. Pour batter into pan.
- Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.
- In 1 1/2-quart saucepan, melt 2 tablespoons butter over medium heat; cook about 3 minutes or until butter just begins to brown. Immediately remove from heat. Stir in remaining glaze ingredients until smooth and spreadable. Pour over warm cake. Cool 30 minutes. Serve warm.

- In a large bowl, combine the apples and sugar. Let stand for 30 minutes. , Preheat oven to 350°. In a small bowl, whisk the eggs, oil and almond extract. Add to apple mixture and toss to coat. Combine the flour, baking powder, salt and cinnamon; stir into apple mixture just until moistened. Stir in pecans. , Transfer to a greased 11x7-in. baking dish. Bake 35-40 minutes or until a toothpick inserted in the center comes out clean. , For sauce, in a small saucepan, melt butter. Stir in the sugar, flour and salt until smooth. Gradually add water. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in extracts. Serve with warm cake.

- Cream the butter; gradually add the sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition.
- Combine flour and the next 5 ingredients; add to the creamed mixture, beating until blended. Stir in the apple and pecans.
- Pour batter into a greased and floured 13 x 9 x 2 inch baking pan. Bake at 325 degrees for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean. Let cool completely in the pan on a wire rack. Serve with Hot Buttered Rum Sauce.

- Combine the sugar, butter, and half and half in a saucepan; cook over low heat, stirring occasionally, until sugar dissolves. Remove from heat, and stir in the rum extract.

- Place all the raisins in a small bowl with the rum and let sit overnight or at least 4 hours.
- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking pan.
- In a large bowl, beat butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time; mix in applesauce.
- In another bowl, stir together the flours, cornstarch, baking soda, cinnamon, nutmeg, salt, and cocoa. Gradually add flour into the batter, mixing until fully incorporated. Stir in the raisins, along with any rum that was not absorbed, and the walnuts. Turn batter into the prepared pan.
- Bake in preheated oven until a tester inserted in the middle of the cake comes out clean, about 25 minutes. Cool on wire rack.

My mom was the one who first made this recipe and let me tell you, it is to die for! Tastes like a dessert you would order at a fancy restaurant! It came off of a real estate card in the mail. I had to share it because its amazing!! (You may want to double the recipe, its that good!)
