WEST AFRICAN JOLLOF RICE
West African Jollof Rice is superb! My parents are nigerian. I grew up eating this rice and every eaten at every party where the host is west african. Every west african country has its own version, however this is the best! Enjoy!

Steps:
- Method.
- Add oil and butter in a heat resistance pot, then add the chicken breast, paprika, cayenne, onion, celery, green pepper, garlic and ginger. Saute for about 3 minutes.
- Add the chopped carrots next and saute for a minute with little salt.
- Add the tomato paste, tomatoes along with curry powder, bay leaf & thyme. Cook until tomatoes get slightly soft. For about 3 minutes until you see the oil getting red. Then add frozen veggies. . Add the rice next. Saute for another 2 minutes or so.
- Add 3 cups of vegetable stock/water, bouillon cube, required salt,close the lid and cook until 90% cooked, for about 30 minutes.
- Allow the rice to continue cooking until the rice is soft. If it is not dry at this point, then switch the heat to low to allow it to dry the excess water without making the rice much softer.
- If rice is still lil hard, add 1/4 cup water and cover with foil, which will allow it to steam through. Check back at 5 min and It should be ready. You want your rice not too soft.
- Garnish with cilantro/parsely and serve.

- In a saucepan, combine the rice, salt, turmeric, sugar, cinnamon, raisins, butter and water. Bring to a boil uncovered. When it comes to a boil, reduce the heat to low, cover and let it simmer for 20 to 30 minutes, or until rice is fluffy and water has been absorbed. Remove from the heat and fluff with a fork. Keep warm until serving time.

- In a 3- or 4-qt. slow cooker, combine onion and oil. Place chicken thighs on top of onion; sprinkle with next 7 ingredients. Top with raisins, olives, lemon and garlic. Add broth. Cook, covered, on low until chicken is tender, 4-5 hours. Serve with hot cooked rice.

AFRICAN STYLE RICE
I am posting this to serve with Easy African-style peanut chicken. I am a single mother with a disabled child. Since I work and go to college, I need easy, delicious dinners. This isn't really authentic but a friend of mine is in Africa and sends me recipes to "tweak" for my ease of cooking!

Steps:
- In a sauce pan, melt butter and add rice to saute.
- when Rice is a nice golden color, add chicken brother, dash of coriander powder, dash of turmeric and bring to boil.
- At boiling point, reduce heat to low and cover.
- Cook for 20 minutes. DO NOT OPEN LID UNTIL 20 Minutes is up! I suggest setting a timer!
- When done, fluff with fork and serve with Easy African-Style Peanut Chicken!

- Place 6 cups of water into a pot. Set pot on high heat and bring the water to a boil. To the water add 1 teaspoon of salt, 1 teaspoon of chicken bouillon powder, 1 teaspoon of curry powder and the bay leaf. Thoroughly wash the rice (wash about 3 times to remove starch) and add into the pot. Reduce the heat to medium, cover pot and let the rice cook until done.Once the rice is done open pot, fluff the rice and spread open the rice to cool. You could also transfer the rice to a large tray and spread to cool.
- Place the liver into a pot set on medium heat. Add half cup of water, a quarter teaspoon of salt, 2 tablespoons of the chopped onions, one eighth teaspoon of the thyme and one eighth teaspoon of white pepper. Stir everything so the seasoning is evenly distributed. Cover the pot and let it cook until the liver is tender. Watch well and if the liquid dries up before the liver is tender, add a little more liquid.Remove liver from its stock and place on a plate to cool down.
- Place the garlic and ginger into a mortar and pound into a paste. Or place the garlic and ginger into a blender, add a little water and blend into a paste.
- In a medium bowl or on a plate combine the chicken with 1 teaspoon of the garlic ginger paste, 1/4 teaspoon of salt, 1/8 teaspoon of thyme, and 1/8 teaspoon of white pepper. Mix everything well so the seasoning is evenly distributed on the chicken.
