EASY OATMEAL MUFFINS
A simple but delicious recipe for oatmeal muffins.

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Grease muffin cups or line with paper muffin liners.
- In a small bowl, combine milk and oats; let soak for 15 minutes.
- In a separate bowl, beat together egg and oil; stir in oatmeal mixture. In a third bowl, sift together flour, sugar, baking powder and salt. Stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups until cups are 2/3 full.
- Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.

HIGH-FIBER POMEGRANATE-OATMEAL MUFFINS
I adapted an old recipe my grandmother used to make by switching to white whole wheat flour, adding flax, and using agave nectar instead of sugar. This makes a fantastic high-fiber, moist, low-glycemic breakfast treat that my 2 toddlers love. Hope you enjoy!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease a 1 1/2 12-cup muffin tins or line 18 cups with paper liners.
- Combine white whole wheat flour, oats, cinnamon, salt, baking soda, baking powder, and ground ginger together in a bowl. Set aside.
- Beat eggs in a large bowl and add oil and agave nectar. Add pomegranate seeds, flaxseed meal, and vanilla extract. Slowly add flour mixture to the egg mixture until mixed well. Spoon batter into 18 cups of a muffin tin.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 22 minutes.

OATMEAL MUFFINS
A moist, very tender muffin that we all enjoy. I eat mine plain but they are also good with butter or jam. It is surprising how tasty they are without any spices, flavorings or zest but the buttermilk and oats really give this muffin its flavor. Please note that the oats need to soak for 1 hour before preparing the muffins so I've included that in the prep time.

Steps:
- Soak oatmeal in buttermilk 1 hour; add egg and beat well.
- Add sugar and mix.
- Add cooled shortening.
- Add flour sifted with salt, baking powder and soda.
- Bake in greased muffin pans in hot oven (400 degrees) 15 to 20 minutes.

- Beat egg mix with ricotta cheese, agave and softened butter. Mix in 1 cup oats, orange peel and baking soda. Slowly add flour. Grease and flour giant muffin tin. Sprinkle remaining oats on each muffin. Bake at 375°F about 25 minutes or until wooden pick inserted near center comes out clean. Remove from pan cool slightly on wire racks. Serve warm.

- Pre-heat oven at 450°F.
- Cover 12 muffin bowls with oven-safe paper.
- On a big bowl, mix oatmeal, nuts, raisins, baking powder and salt (if used).
- Add the rest of the ingredients and mix til you have an even mix.
- Put the mix on the muffin bowls and fill 3/4 of each one.
- Bake for 13-15 min or til golden.
