AGEDASHI TOFU BAKED IN TOASTER OVEN

Steps:
- Place a block of tofu in a bowl and put a heavy weight on top for a few hours to drain water.
- Line a toaster oven pan with aluminum foil or parchment paper and spray oil. Preheat the oven toaster to 450°F/225°C.
- Dice tofu into large chunks and coat them with potato starch.
- Bake tofu in the toaster oven for about 20 minutes until they are lightly browned.
- In a meantime, heat 1 1/2 cups of water in a small pan.
- Peel and grate daikon radish and ginger separately. Thinly slice green onions.
- Add tamari, dashi, sake (if using), and ginger to the hot water in the pan and stir. Reduce heat.
- In a small bowl, add 2 tsp of potato starch and 2 Tbsp of water and mix well to dissolve the starch.
- Add the starch mixture to the pan and stir. Turn off the heat.
- In a dish, place baked tofu and top with grated radish, green onions, and nanami togarashi (if using).
- Pour the soup. Infuse love and serve immediately.

BAKED ITALIAN STYLE TOFU (TOASTER OVEN)
My toaster oven has a fan in it and I love to use it to brown foods. I came up with this tofu recipe yesterday and I was delighted with the results. I served this with pasta and Marinara sauce.

Steps:
- Preheat the toaster oven to 350'F
- Line your toaster oven pan with tin foil and spray generously with coconut oil. I use coconut because it doesn't go rancid like other oils when they are heated.
- Open the tofu packages and drain.
- Break the egg in a shallow dish and beat it until combined.
- Put the bread crumbs in a shallow dish.
- Cut each of the tofu blocks in half the long way. This will give you 4 blocks total. If you like it thinner cut them into 3 so you have 6 pieces.
- Dip in the egg, then the bread crumbs. Salt and pepper the tops.
- Place on the prepared pan and spray each piece with oil generously.
- Bake for 25-30 minutes. Check them periodically to make sure they aren't burning.
- Serve with your favourite spaghetti sauce and pasta. You can even make them into a sandwich with toppings. This is very versatile.

JAPANESE AGEDASHI TOFU
This quick and easy Japanese fried tofu recipe is a great appetizer. Crispy fried cubes of tofu are served with a tasty sauce and chopped green onion.

- Place the block of tofu between sheets of paper towels. Set a plate on top; add a 3- to 5-pound weight to the plate. Press tofu for 15 minutes; drain and discard the accumulated liquid.
- Meanwhile, combine water, soy sauce, mirin, and dashi in a saucepan. Bring to a boil over medium heat. Remove from heat and set aside.
- Remove weight, plate, and paper towels. Cut tofu into 3/4-inch cubes. Place flour in a bowl and lightly coat tofu with flour.
- Heat oil in a heavy pot and fry tofu until golden-brown, 4 to 6 minutes. Fry in batches if necessary so as not to overcrowd the pot. Place fried tofu in a serving dish and pour sauce on top. Sprinkle with green onions.

- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a large baking sheet.
- Gently press tofu pieces to release as much water as possible. Arrange tofu on the prepared baking sheet.
- Whisk soy sauce, agave nectar, sesame oil, garlic, and ginger together in a bowl until marinade is evenly combined. Brush half of the marinade over tofu pieces.
- Bake in the preheated oven for 30 minutes. Flip tofu and brush remaining marinade over tofu. Sprinkle sesame seeds over tofu. Continue baking until tofu is crisp, about 30 minutes more. Transfer tofu to a wire rack using a spatula; cool.

- Cut tofu into 12 cubes. Place cornstarch on a plate or in a shallow bowl and dredge tofu in it, coating thoroughly.
- Heat enough oil so that tofu will be half-way submerged. Fry tofu in hot oil for 3 to 5 minutes on each side, or until crispy. Drain on paper towels.

- Pick Your Tofu. This recipe works best with extra-firm tofu or super-firm tofu. The edges get crispy but the middle is still tender and the tofu pieces don’t fall apart when flipped.
- Drain, Slice, and Press. To start, open the tofu container and drain out the water. There are a lot of ways you can tackle pressing tofu. I prefer to slice our tofu before pressing, it seems to get more moisture out.
- Marinade Your Tofu. Combine the marinade ingredients in a shallow covered container or resealable plastic bag and mix well. Add the pressed tofu and let it sit for a minute, then flip the pieces over.
- Prep Your Toaster Oven. Once you’re ready to broil the tofu, remove it from the fridge and let it sit on the counter for 5 to 10 minutes to come to room temperature.
- Make Your Tofu. Lightly oil your baking sheet. Then remove the tofu pieces from the container, shake off any excess marinade, and place the tofu on the pan.
