ALASKAN SOURDOUGH PANCAKES

Easy to make sourdough pancakes with a nice flavor that my two daughters love.

Alaskan Sourdough Pancakes image

Steps:

  • Mix sourdough starter, milk, egg, and oil together in a bowl,
  • Combine flour, sugar, baking powder, baking soda, and salt in a separate bowl. Add wet ingredients and stir until just mixed; some lumps are okay.
  • Lightly spray a griddle with cooking spray and heat over medium-high heat. Working in batches, drop batter by 1/4 cupfuls onto the hot griddle. Cook until bubbles form and edges are dry, about 2 minutes. Flip and cook until golden brown, another 2 to 3 minutes.

This is an excellent recipe for blueberry pancakes. A delicious, nutritious and flavorful breakfast. When blueberries are out of season, use thawed frozen blueberries.

Steps:

  • Preheat griddle over medium heat. Stir together the flour, baking powder, nutmeg, cinnamon and sugar, set aside.
  • In a medium bowl, stir together the egg, yogurt, milk and oil. Gradually stir in the flour mixture, then fold in the blueberries.
  • Pour batter onto hot greased griddle, two tablespoons at a time. Cook over medium heat until bubbles pop and stay open, then turn over and cook on the other side until golden.

Fancy name for sourdough pancakes! I made these for family who were visiting and they could not stop raving about how good these were. The batter is made up the night before, so there is minimal fuss in the morning.

Alaskan Blueberry Silver Dollars (Sourdough Blueberry Pancakes) image

Steps:

  • Night before: Combine sourdough starter, flour, milk and salt in a non-reactive bowl with a whisk. Cover with kitchen towel or cheesecloth and let stand overnight on the counter.
  • Next morning: Stir down the batter and whisk in the baking soda, eggs, melted butter and sugar. Fold in fresh blueberries; making sure that they are incorporated into the batter.
  • Spray griddle with Pam and pour large silver dollar size batter onto hot griddle. Cook until golden brown. Serve with butter and heated maple syrup or pancake syrup.
  • Note: The blueberries need to be folded into the batter, rather than placed on top of the pancake. The blueberry will burn and make the griddle hard to work with for the next batch of pancakes. Spray Pam in between each batch so that they do not stick.

  • Pour sourdough starter into a large glass or plastic bowl. Whisk in milk vigorously until frothy. Stir in eggs, butter, oil, sugar, flours and salt. DO NOT add baking powder and soda yet. Cover and refrigerate batter overnight.
  • In the morning, heat griddle or a large non-stick skillet over medium heat. Add oil to griddle or skillet and wipe most of it away with a bunched up paper towel.
  • Immediately before you're ready to cook pancakes, stir baking powder and baking soda into batter. It will become bubbly. Pour small amounts (1/4 cup to 1/3 cup depending on how large you want your pancakes) of batter into skillet using a ladle or small measuring cup. Make sure you don't place batter too close together or pancakes will run together and become difficult to flip. Drop desired amount of blueberries on top of the batter. Cook until batter starts to become firm at the edges, bubbles rise to the top of the batter and the bottom is golden, 3-5 minutes. Reduce heat to medium-low if pancakes brown too quickly. Flip pancake and continue to cook until bottom is golden brown and pancake is cooked through, about 3 more minutes.
  • Serve immediately with maple syrup or keep warm in a 200°F oven. Pancakes can be completely cooled and frozen in a freezer bag. Reheat in microwave.
