ALOO RAITA

I got this recipe from a cookbook "Wonderful Ways to Cook Curries" I paid 50c for the book in a thrift shop and don't plan to keep the poor old thing. I haven't made this recipe, but we eat a lot of curries and I know I will. Remember an Australian tablespoon is 4 teaspoons.

Aloo Raita image

Steps:

  • Blend together the yogurt, cumin, salt, pepper and chili powder.
  • Chill in fridge.
  • Cook potatoes in boiling water.
  • Peel and dice when cool.
  • Mix with the yogurt.
  • Serve garnished with chopped chives and cumin seeds.

  • Place potatoes in a pressure cooker, pour enough water in it, and boil the potatoes for 10-12 minutes. Once boiled, drain the excess water and let the potatoes cool. Then chop the potatoes into small cubes.
  • Meanwhile, beat the curd into smooth consistency in a large bowl. Then add the cubed potatoes, salt and mix well.
  • Place a frying pan over medium heat and pour oil in it. Once the oil is heated, add cumin seeds, pepper and red chilli powder. Stir the mixture for 1-2 minutes. Add this mixture to the potato curd mixture.
  • Garnish with coriander leaves. Mix all the ingredients well. Aloo Raita is now ready to be served!
