Steps:

  • Combine the chicken, vegetables, herbs, and peppercorns in a large stockpot. Pour in enough water to just cover the chicken completely. Heat the water to just under a boil over medium-high heat. Reduce the heat to a very low simmer, so that 1 or 2 bubbles break the surface of the broth about once a minute. Skim any fat and scum from the surface with a ladle, large spoon, or skimmer. (To prevent losing a lot of stock when skimming, put the skimmed liquid into a degreasing cup, and return any useable broth back to the pot.) Cook for about 1 hour or until the chicken is cooked through but not dry.
  • Remove the chicken from the pot, but continue to simmer the broth. Cool the chicken for about 10 minutes. Cut the chicken meat from the bone, and reserve for a chicken salad, soup, or other recipe. Return the bones to the pot and cook for 1 hour.
  • Strain into a non-reactive container, like another pot, a large bowl, or plastic quart or pint containers. Fill the sink with a mixture of ice and cold water so it comes about halfway up the sides of the container. Nestle the broth in the ice bath. (Stirring the broth speeds up the cooling process.) Cover and refrigerate or freeze the broth for future use. Broth can be stored in the refrigerator for up to 5 days. If the broth is unused after 5 days bring it to a boil before using.

1 medium parsnip, peeled and quartered, optional
3 generous sprigs fresh thyme or 1 teaspoon dried
3 generous sprigs flat-leaf parsley
5 whole black peppercorns
1 bay leaf

Steps:

  • Place all ingredients in a soup kettle or Dutch oven. Slowly bring to a boil; reduce heat until mixture is just at a simmer. Simmer, uncovered, for 3-4 hours, skimming foam as necessary. , Set chicken aside until cool enough to handle. Remove meat from bones. Discard bones; save meat for another use. Strain broth, discarding vegetables and seasonings. Refrigerate for 8 hours or overnight. Skim fat from surface.

  • Herb Water. You can use regular water or water with butter for your chicken broth substitute, but you can also use water mixed with herbs. Just throw in some of your more flavorful herbs like tarragon, thyme, basil, or oregano and let it simmer in the water releasing all its flavors.
  • Chicken Stock. It’s hard to tell the difference between chicken stock and chicken broth but you can use either without sacrificing any flavor. Chicken broth uses the bones from the chicken along with some veggies and herbs, but chicken stock substitute focuses on the meat from the chicken.
  • Dashi. Looking for a real flavorful substitute that will add a little umami to your meal? Dashi is a lesser-known Asian ingredient that comes in dry or liquid forms.
  • Vegetable Stock. Vegetable stocks are usually lower in sodium content than most chicken stocks, so if you are looking to cut down on salt, this is the way to go.
  • Aquafaba. You might not have even heard of aquafaba and that’s fair, not many people have. Even fewer have used it for cooking. But if you don’t have any chicken stock around, you can still get a flavorful meal by taking the liquid from your can of beans or chickpeas and adding it to your dish.
  • Beef Broth. Beef broth is a great substitute for chicken because it has deeper and complex flavors. The natural beefy flavors and umami that come from bone broth deeply enhance the flavor of your dish.
  • Coconut Milk. This isn’t always going to be your go-to substitute when you don’t have some chicken stock, but if you really need it, coconut milk can work.
  • Chicken Bouillon Granules. Chicken bouillon granules can serve as a nice substitute for chicken broth. In fact, even people who do enjoy chicken broth often choose to use it instead.
  • Wine. Wine doesn’t taste anything like chicken broth, but if you’re really in a jam you can still use it as a substitute. Dry wine works much better for cooking than other types and it can even deglaze the cooking pan you’re using.
  • Chicken Bouillon Cube. Bouillon cubes are dehydrated chicken stock that has been compressed into a small cube. Bouillon cubes can be added to any dish for a quick, simple boost of flavor!


14 EASY WAYS TO SUBSTITUTE FOR CHICKEN BROTH

  • Chicken Stock. You can use chicken broth and chicken stock interchangeably as there’s only a slight difference between the two. Chicken stock is a tad thicker and is made by boiling a mixture of bones with vegetables and seasonings as opposed to the chicken meat.
  • Vegetable Stock. Vegetable stock is a great vegan alternative to chicken broth. It is more neutral in flavor, but works well as a 1 to 1 substitute. Taste your dish and add additional herbs and seasonings if needed.
  • Beef Broth. Beef broth is made in a similar way to chicken broth, but has a much stronger flavor which can overpower some dishes. If beef broth is all you have on hand, you can dilute it with water and use it as a 1 to 1 substitute (or undiluted, depending on your recipe and taste).
  • Chicken Bouillon Granules. Chicken bouillon granules make a great replacement for broth. These granules can be bought in most grocery stores and when added to water, make their own broth.
  • Chicken Bouillon Cube. Chicken bouillon cubes are very similar to the granules. They work the same way when reconstituted with water. Dissolve 1 cube in 1 cup hot water and use as a 1 to 1 substitute.
  • Chicken Base or Chicken Broth Concentrate. These substitutes are both, great flavor-packed alternatives to broth. Chicken base is usually found in a jar and chicken broth concentrate typically comes in a packet from the store.
  • Water. Surprisingly, water can make a great substitute for broth in most soups, stews and sauces and everyone has this in their kitchen already. Depending on the recipe, you’ll likely be cooking with aromatics and other base ingredients that are used to make chicken broth anyway, so you can create your own broth as you go.
  • Salted Butter and Water. If the thought of using just water is unappealing to you, you can add in some butter to create a richer flavor (or olive oil).
  • Wine. Wine will alter the flavor of your dish, but can be used in a pinch for recipes that call for less then 1/2 cup. Dry white wine makes a good option and can also help to deglaze your pan, depending on the dish.
  • Coconut Milk. If you happen to have coconut milk on hand, you can use it as a substitute for chicken broth in a pinch. This replacement works especially well in curry dishes and some African dishes.
