AMANDA'S SAUCY PORK CHOPS
My Mom has made this for years, its so good and its such a nice change for making pork chops. Its a filling meal, we always make it with either rice or mashed potatoes, its sooo good.

Steps:
- 1. Brown chops in a skillet with a little oil and salt and pepper.
- 2. In a bowl combine soup, ketchup and worcestershire sauce. Mix well.
- 3. Place pork chops in a dish or pan to put in the oven. Pour mixture over chops and place sliced onions in. Add a 1/2-1 cup of water to mixture.
- 4. Cover and bake at 375 degrees for about 45 min. Serve with rice or mashed potatoes, its great!!

- Preheat oven to 350°. In a large skillet, heat butter over medium heat. Brown pork chops on both sides. Transfer to a greased 11x7-in. baking dish; sprinkle with onion., In a bowl, mix remaining ingredients; pour over chops. Bake, covered, until a thermometer inserted in pork reads 145°, 15-20 minutes. Let stand 5 minutes before serving.

"PORK ON PORK" CHOPS
Steps:
- Preheat the oven to 400 degrees F.
- In a food processor, combine the pancetta, thyme, rosemary and garlic. Pulse until the mixture is finely ground. Set aside.
- Make sure the pork chops are at room temperature, then liberally season them with salt and pepper on both sides.
- Heat the canola oil in a large ovensafe skillet or grill pan over high heat. When the oil is hot, sear the pork chops for about 2 minutes on each side.
- Stick the pan in the oven to finish cooking the pork, 5 to 6 minutes. Depending on your oven, of course, and the thickness of your chops, this should result in a medium to medium-well chop, still slightly pink in the middle. If you prefer a more well-done chop, add a minute or 2 to the cooking time.
- While the pork chops are in the oven, heat a large saute pan over high heat. Add the pancetta and herb mixture. Turn the heat down to low and continue to cook the pancetta, stirring continuously to break up any large chunks, until all the fat is rendered and the pancetta is crispy, 8 to 10 minutes.
- Serve the pork chops topped with the crispy herbed pancetta and rendered fat. Serve while hot and bubbling!
CHILI PORK EMPANADAS WITH AVOCADO DIPPING SAUCE

- Preheat the oven to 425 degrees F.
- Add the oil to a large saute pan over medium-high heat. Season the pork with chili powder, salt and pepper, to taste, and quickly sear for 2 minutes. Remove from the pan to a bowl and cool slightly. Add the scallions, cilantro, chipotles and queso fresco and mix well.
- Roll out the pie rounds on a lightly floured surface and using a 3-inch biscuit cutter, punch out rounds of dough. Put about 2 tablespoons of the filling, off-center, on each dough round. Brush the edges of the dough with beaten egg. Fold the dough over the filling and crimp the edges with a fork. Arrange them on a half sheet tray lined with parchment paper and brush the tops with remaining beaten egg. Bake until nicely browned, about 13 to 15 minutes. Remove the empanadas from the oven and arrange them on a platter. Serve with the dipping sauce.
- Dipping Sauce:
- In the same pan the pork was cooked in, add the butter. Turn the heat to high and add the shallots. Cook the shallots until nicely caramelized, about 4 to 5 minutes. Add the shallots, avocado, olive oil, red wine vinegar and sour cream to a blender. Season with salt and pepper, to taste, and puree until smooth and velvety. Transfer to a serving bowl and serve with the empanadas.
SAUCY PORK CHOPS
I got this recipe out of a cookbook that uses 5 ingredients or less. It's the simplest way to make tender, tasty pork chops. I always hated pork chops growing up, only ever eating a dried out, fried, and breaded chop. I refuse to make them this way. These are delicious and the sauce is very good over the rice.

- Add half of the ketchup and Worcestershire sauce in a ziplock bag with the pork chops.
- Set in refridgerator for 15-45 minutes.
- Mix remaining ingredients in bowl.
- Place pork chops and marinating liquid in an ungreased 13"x9" baking pan.
- Top with sauce mixture.
- Cover and bake one hour at 350 degrees.
- Serve over rice.
