Amaretto Almond Chicken Recipe - (5/5) image

Steps:

  • In a large skillet, melt the butter. Coat the chicken breast in the flour mixture and saute in the butter, turning until cooked thru and browned. Add garlic. Remove chicken and keep warm. Add almonds and Amaretto to the skillet and cook for 1 minute. Add the cream and heat thru stirring till thicken. Return the chicken to the skillet coating chicken. Let stand covered a few mins before serving.

1/4 cup butter
6 boneless skinless chicken breast halves
Flour, salt, pepper - mixed
1 clove minced garlic
3 T sliced almonds
1/4 cup Amaretto
1 cup heavy cream or half and half

Steps:

  • 1. Preheat oven to 350 degrees.2. Combine flour, salt, pepper, paprika and garlic powder and coat chicken.3. Heat oil and butter in skillet and saute chicken until brown (3-4 minutes per side). Remove and put in casserole dish.4. To skillet, add mustard and sugar free syrups. Boil, stirring until slightly thick (about 3 minutes). Pour sauce over chicken and bake, covered for 20 minutes.

Steps:

  • Combine water and sugars in a saucepan over medium heat. Heat until the mixture is boiling, and all of the sugar is dissolved. Remove the pan from the heat and let the mixture cool for 10 minutes.
  • Stir vodka, almond extract and vanilla extract into the mixture. Store in a sealed bottle.

Steps:

  • Cut chicken into 1-inch wide strips.
  • Mix seasonings and flour in plastic zip-loc bag; shake chicken strips in mixture to coat thoroughly.
  • Melt butter over medium heat (or use oil) and saute chicken quickly.
  • Reduce to medium low and add mushrooms, almonds, lemon rind and juice and Amaretto.
  • Stir thoroughly and simmer to warm through, about 5 minutes.
  • Stir cornstarch into water, then blend with broth.
  • Pour into chicken mixture.
  • Cook over low heat until thickened, stirring constantly.
  • Serve over noodles or rice.

1/2 lb mushroom, cleaned and sliced

1 lemon, juice of
1 tablespoon cornstarch
1/4 cup cold water
1 1/2 cups chicken broth

I have not tried this out, but I found it on a copycat recipe site and it is supposed to be comparable to Di Saronno brand liqueur.
