TOFFEE STUDDED SNICKERDOODLES

How can you improve on a classic cookie? Add toffee bits! I found this on another recipe site, tried it and now it is a family favorite.

Toffee Studded Snickerdoodles image

Steps:

  • Preheat oven to 400 degrees.
  • Beat butter, shortening and 1 cup sugar in a large bowl until fluffy.
  • Add eggs; beat thoroughly.
  • Stir together flour, cream of tartar, baking soda and salt; gradually add to butter mixture, beating until well blended.
  • Stir in toffee bits.
  • In a small bowl, mix 3 tablespoons sugar and the cinnamon together.
  • Shape cookie dough into 1 1/4 inch balls, roll in sugar-cinnamon mixture.
  • Set onto cookie sheet and bake 9 to 11 minutes or until lightly browned around the edges.
  • Cool slightly then remove from cookie sheet.

1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
2 eggs
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups Skor English toffee bits
3 tablespoons sugar
1 teaspoon cinnamon

Amazing Toffee-Studded Snickerdoodles image

Steps:

  • Heat oven to 400. Beat butter, shortening and 1 cup sugar in bowl until light and fluffy add eggs beat thoroughly. Add vanilla extract. In a seperate bowl stir together flour, cream of tartar, baking soda and salt. Gradually add the flour mixture to the butter mixture beating until blended and then stir in toffee bits.
  • In a seperate bowl stir together 3 tbsp sugar and 1 tsp cinnamon.
  • Shape cookies into 1 1/4 inch balls and roll in cinnamon and sugar mixture. Place on ungreased cookie sheets for 9-11 minutes. Cook until slightly brown around the edges. Cool overnight for the best flavour.

I love these cookies! This recipe was adapted from a recipe on chooseveg.com, but my version has some changes. These cookies are a bit of a staple in our house, and are often requested by my non-veg husband and in-laws. They come together really fast, and are full of Snickerdoodle Cinnamon Sugar deliciousness. The end result is a soft cookie with a slightly crisp edge. Try them, you won't regret it!

Vegan Snickerdoodles image

Steps:

  • Oven @ 375°F.
  • Mix all dry ingredients in a bowl.
  • Make a well in center of dry, and add the wet ingredients there.
  • Mix equal parts cinnamon and white sugar in a small bowl.
  • Use hands to pull out cookie balls and roll them in cinnamon sugar mix.
  • Place on cookie sheet & flatten a little with fork or fingers.
  • Bake for 8-10 minutes.
  • Allow to cool for a couple minutes on cookie sheet before moving.
  • I get 12 cookies out of this recipe, but they disappear so fast you might want to double!

Steps:

  • Mix together thoroughly the shortening, sugar and eggs.
  • Sift together and stir in flour, cream of tartar, soda and salt. Roll into balls the size of small walnuts.
  • Roll in mixture of 2 tablespoons sugar and 2 teaspoons cinnamon.
  • Place 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes in medium to hot (400 degrees) oven until lightly brown but still soft. These cookies puff up at first, then flatten out with crinkled tops.
