- Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

- Whisk together the lime juice, honey or agave nectar and ginger in a small bowl.
- Cut away the peel and white pith from the grapefruit. The easiest way to do this is to cut the ends off, then stand on one end and cut away strips of skin and pith at the same time. Hold the grapefruit over your serving bowl and cut the sections away from the membranes that separate them. Place in the bowl.
- Peel, core and dice the pears. Add to the grapefruit. Add the grapes, dates, pomegranate seeds and chia seeds. Stir the lime-ginger marinade and toss with the fruit. Chill for 30 minutes or longer and toss again.
- Sprinkle the coconut over the top and serve.

- 1. Drain fruit cocktail, reserving 2 tablespoons of the syrup. Place fruit cocktail in a medium bowl. Set fruit and syrup aside.2. Peel orange and cut into bite-size pieces. Add to fruit cocktail. Stir in 1/2 cup coconut until blended. Chill until ready to serve.3. In a small bowl, mix mayonnaise and 2 tablespoons reserved syrup until blended. Set mayonnaise mixture aside until ready to serve.4. To serve, place salad greens in a salad bowl. Add well-drained fruit mixture and mayonnaise mixture toss lightly until all ingredients are lightly coated.5. Garnish with additional coconut.Serve with roast beef sandwiches, hot dogs or spaghetti with meatballs.
