AMISH CREAMED CORN CASSEROLE
This is another recipe the Amish shared with me...I added the bacon...I take this a lot to Church potlucks and it's always a big hit...enjoy!

Steps:
- 1. Preheat oven to 375 degree F. In a 3 quart casserole; add the corn, saltines, sugar, salt & pepper. Mix eggs and add to casserole. Stir all well.
- 2. Lay butter pats evenly over casserole and sprinkle with bacon. Bake 1 hour 15 - 30 minutes. If the corn starts drying too much on top, add some foil and finish baking.
- 3. When serving, I mix the bacon into the corn. Enjoy!
CREAMED CORN CASSEROLE
Creamed corn is one of my favorite comfort food dishes. Here, I've used my recipe for that dish in a different way that's perfect for gatherings with family and friends: a casserole! Boxed corn muffin mix, Cheddar cheese and sour cream are added to my creamed corn and bake up into an irresistible side dish that everyone will love.

- Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
- Cut the corn kernels from the cobs (about 8 cups) and scrape the cobs to remove all the liquid. Melt the butter in a large skillet over medium heat. Add the corn, milk, salt and pepper. Simmer until the corn is softened and the mixture begins to thicken, about 5 minutes. Remove from the heat.
- Stir together the cornbread mix, sour cream, eggs and half of the cheese in a bowl. Stir in the creamed corn. Pour the mixture into the prepared dish. Sprinkle with the remaining cheese. Bake until the casserole is browned and set, 35 to 40 minutes. Sprinkle with the green onions before serving, if desired.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add egg noodles and cook until tender, about 7 minutes. Drain and return to the pan. Mix in the cream of chicken soup until noodles are coated.
- Crumble the ground beef into a large skillet over medium-high heat. Drain the grease, and stir in the tomato soup, brown sugar, pepper and salt. Spread half of the beef in the bottom of a greased 2 1/2 quart casserole dish. Arrange 5 slices of cheese over the beef. Top with half of the noodles, then repeat layers ending with cheese on top.
- Bake for 35 minutes in the preheated oven, until cheese is browned and sauce is bubbly.

- Beat eggs into milk.
- Combine corn eggs, milk, seasonings and 2 tbs melted butter.
- Pour into casserole dish.
