AMISH STYLE LEMONADE

Steps:
- Cut lemons in half lengthwise and slice thinly, as if for garnish.
- Mash them with the sugar and salt in a large, deep bowl or crock with an old-fashioned potato masher or heavy wooden spoon until the slices give up their juice, the sugar is dissolved and the juice is syrupy, about 5 minutes.
- Pour about half the lemon slices into a sieve over a bowl or pot, pressing the solids to release as much liquid as possible.
- Discard the solids and transfer the liquid to a serving pitcher.
- Repeat the process with the remaining lemons.
- Stir in the water until blended.
- Add ice cubes or chill, stirring just before serving over ice.

VINTAGE LEMONADE
In the 1800's this is how people made lemonade--you can do it too! It's not that difficult, and tastes wonderful!

- Peel the rinds from the 5 lemons and cut them into 1/2 inch slices. Set the lemons aside.
- Place the rinds in a bowl and sprinkle the sugar over them. Let this stand for about one hour, so that the sugar begins to soak up the oils from the lemons.
- Bring water to a boil in a covered saucepan and then pour the hot water over the sugared lemon rinds. Allow this mixture to cool for 20 minutes and then remove the rinds.
- Squeeze the lemons into another bowl. Pour the juice through a strainer into the sugar mixture. Stir well, pour into pitcher and pop it in the fridge! Serve with ice cubes.

- Juice halved lemons (you should have about 1 1/2 cups). In a small saucepan, bring sugar and 1 1/2 cups water to a simmer, stirring until sugar is dissolved. Add lemon rinds; cook over medium until mixture is syrupy, about 12 minutes. Strain; let cool completely.
- Muddle mint with syrup in a pitcher. Stir in juice and 4 cups cold water. Top with ice and lemon slices; serve.
