Refreshing & spicy. Found especially for the recipe swap. I think champagne, wine or juice could be substituted for the Madeira or Sherry. The prep time doesn't include chilling time.

Steps:
- Wash, hull and halve or slice berries. Sprinkle with powdered sugar and let sit 10 minute Meanwhile, mix sherry with lemon zest and spices. Pour over berries and chill.
- At serving time, whip cream with sugar to taste. Spoon berries into sherbert glasses. Garnish with a dollop of whipped cream and a sprinkling of crystallized ginger.

PROVA DE AMOR (LOVE PROOF) - BRAZILIAN CUISINE
My aunt makes this whenever we have a family get together, it's the perfect dessert for summer time too - creamy on the bottom, with a layer of refreshing Jello mixed with whip cream on top. I was always surprised as a child when after cooling the dish the Jello layer turned into two separate ones, red and pink because of the whip cream.

Steps:
- Mix together the sweetened condensed milk, milk, egg yolks, and corn starch. Cook the mixture over low heat until it becomes a thick cream. Set it aside and let cool.
- Mix the Jell-o powder with one cup of hot water, after it has dissolved completely add the cold water.
- Beat the egg whites together with the sugar in a mixer at high speed until if forms stiff peaks (may take a while).
- Mix the Jell-o with the egg white mixture.
- Cover the bottom of a 9x13 with the thick cream. Add the Jell-o and egg white mixture as a second layer, and refrigerate until completely set.
- (The Jello and egg white mixture will separate a bit turning into two different layers - a second Jell-o layer and a third frothy pink layer) --really interesting how this looks in the end.

UNBELIEVABLE CHILI (RAW FOODS)
From Alive in 5 by Angela Elliot. I haven't tried it yet, but it looks yummy! Posted for the Veg*n Recipe Swap. (I think I've read that the Himalayan and Celtic salts used in many Raw Recipes are a bit less "salty" than regular table salt, so I would salt with caution and to taste.)

Steps:
- Cover sun-dried tomatoes with water and soak for at least 15 minutes.
- Transfer sun-dried tomatoes and their soak-water to a blender.
- Add remaining ingredients, pulse the blender briefly, until the ingredients are just chopped and mixed.
- Should be thick and chunky.
