E-Z DOUGHNUTS
This recipe came from my son's Cub scout pack. These doughnuts are a favorite treat on camp outs, for both the kids and adults!

Steps:
- Separate biscuits and stretch slightly to enlarge them. Poke your finger through center of each one to form doughnut hole.
- Heat oil in small size skillet (you can also use a deep fryer) to about 350°F.
- There should be enough oil to float the doughnuts when cooking, so the amount of oil used will depend on the pan size.
- Place several doughnuts in the oil and fry until golden brown on first side then turn over to finish!
- Place cooked doughnuts on paper towel to drain slightly. In a bowl to which you have added a mixture of the sugar and cinnamon (you can vary this depending on your own taste), place one or two doughnuts at at a time and coat both sides.

- Preheat an oven to 450 degrees F (230 degrees C).
- Mix flour, baking powder, salt, and sugar in a bowl. Cut in the cold butter with a knife or pastry blender until the mixture resembles coarse crumbs. Add milk a little at a time, stirring lightly between additions.
- Drop the batter by spoonfuls onto a cookie sheet, and bake for 12 to 15 minutes, until the tops are golden.

- Preheat the oven to 180 degrees Celsius. Line 2 baking trays with non stick baking paper.
- Beat butter, sugar and vanilla essence until pale and creamy. Add egg and beat until well combined. Add the flour gradually and stir until it is all mixed together properly.
- Flour hands. Roll teaspoonfuls of mixture into balls. Place on tray about 5 cm apart. With a lightly floured finger, create a small indention in the centre of each ball. Spoon half a teaspoon into the centre of each biscuit.

- Heat oven to 450ºF.
- Spray cookie sheet with cooking spray or lightly grease with shortening.
- In medium bowl, stir Bisquick mix, butter and granulated sugar until crumbly.
- Stir in milk until dough forms; beat 15 strokes.

Steps:
- Cut bacon in half lengthwise and then crosswise into 1/4-inch pieces; fry in a skillet over medium heat until crisp, 5-7 minutes. Transfer pieces to a paper towel and cool.
- Adjust oven rack to middle position and heat oven to 475ºF. Line a large baking sheet with parchment paper.
- Whisk flour, baking powder, baking soda, sugar, salt and pepper in a large bowl. Stir in bacon pieces.
- In a medium bowl, combine cold buttermilk and 8 tablespoons melted butter, stirring until butter forms small clumps.
- ***This may look like a mistake, but it's one of the secrets of this recipe. The clumps of butter are similar to small bits of cold butter in biscuits prepared by the traditional method. As the butter melts during baking, the steam helps the biscuits rise and gives them a light and fluffy interior.
- Add buttermilk mixture to dry ingredients and stir until just incorporated and batter pulls away from sides of bowl.
- Using a 1/4-cup dry measure, scoop level amounts of batter and drop onto baking sheet (biscuits should measure about 2 1/4-inches in diameter and 1 1/4-inch high). Space biscuits 1 1/2-inces apart.
- Bake until the tops are golden brown and crisp, 12-14 minutes.

- Into a large bowl, sift together flour, baking powder, salt, baking powder, baking soda and 2 tablespoons of sugar.
- In a small glass bowl add 1 tablespoons sugar, yeast and 1/4 cup of warm water. Make sure water is very warm but not too hot to touch. Allow yeast to bloom for about 5 minutes.
- Work shortening into flour mixture until it resembles coarse crumbs. I like to use my hands but you can use a pastry blender or two knives.
- Add yeast/water/sugar mixture and 2 cups of buttermilk.
- Blend together with a wooden spoon until all wet ingredients are incorporated. The dough will be very sticky.
- Place dough onto cutting board dusted with flour and knead lightly about 5 or 6 times by folding dough back onto itself.
- Roll out to about 1/2 inch thickness. Using 2 inch round biscuit cutter, cut out biscuits and place on cookie sheet lined with parchment paper.
- Brush tops with milk and bake in 425 degree oven for 13-15 minutes.
