Made this on a lark and it ended up being one of the best one-pan meals I've discovered.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking pan.
- Place and press biscuit dough into the bottom of the baking pan and halfway up the sides.
- Bake in the preheated oven until lightly browned, 15 to 20 minutes. Leave the oven on.
- Meanwhile, heat a nonstick skillet over medium-high heat and cook ground beef until browned and crumbly, about 5 minutes. Drain fat. Stir in taco seasoning and water. Bring to a boil, reduce heat, and simmer, stirring occasionally, for 5 minutes. Transfer cooked meat to a bowl and wipe out the skillet.
- Add onion and bell peppers to the same skillet and cook over medium heat until slightly tender, about 5 minutes.
- Combine sour cream, mayonnaise, 1/2 of the Cheddar cheese, and 1/2 of the onions in a bowl.
- Layer browned meat, tomatoes, pepper-onion mixture, jalapeno peppers, and sour cream mixture on top of the prebaked biscuit dough. Sprinkle with remaining Cheddar cheese.
- Bake uncovered in the preheated oven at 350 degrees F (175 degrees C) until cheese is lightly browned and bubble, 30 to 40 minutes.

- In a small saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the water, tomato sauce, tomato paste and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Remove from the heat; stir in vegetables and 1/4 cup cheese. Transfer to a 1-qt. baking dish coated with cooking spray (dish will be full). , Separate each biscuit horizontally in half; arrange around edge of dish. Brush with butter; sprinkle with oregano. Sprinkle remaining cheese over beef filling. , Bake, uncovered, at 375° for 18-22 minutes or until heated through and biscuits are golden brown.

- Preheat oven to 375°. In a saucepan over medium heat, cook beef until no longer pink; drain. Add beans, corn, soup, milk, onion, chili powder and salt; bring to a boil. Remove from heat; stir in cheese until melted. Spoon into a greased 2-1/2-qt. baking dish. Bake, uncovered, 10 minutes., Meanwhile, brush all sides of biscuits with butter; roll in cornmeal. Place on top of bubbling meat mixture. Return to oven 10-12 minutes or until biscuits are lightly browned and cooked through.

ANNA'S BEEF AND BISCUIT CASSEROLE
The original recipe is called "John Wayne Casserole", but it called for green peppers and chilis, which neither my husband nor I can eat, so I felt it was only fair to change the title as well. The original recipe also called for 2 Roma tomatoes, but since I had no ripe tomatoes of any kind I used the tomato sauce instead, and my husband loved it! 5/31/2020 edit - my husband refused to allow the packet of taco seasoning called for in the original casserole (he must not have known it was there), so I've revised this recipe to use seasoning salt instead.

- Preheat oven to 325 degrees.
- Spray a 9" square pan with non-stick cooking spray.
- Brown ground beef until no longer pink, then add seasoning salt, and tomato sauce, and let simmer for 3-4 minutes.
- In a medium bowl, mix sour cream, mayonnaise, and half of the cheese together and set aside.
- Press biscuits into bottom and 1/2" up the sides of pan, forming a solid crust.
- On top of the biscuit dough, layer the remaining ingredients in this order: ground beef mixture, sour cream mixture, and remaining cheddar cheese.
- Bake for 30-35 minutes, or until edges are lightly browned.
ANNE'S FAMOUS IRISH CORNED BEEF
One of our re-entry students at Orange Coast College has brought this recipe in to share with other students for the last two years. EVERYONE loves it! Since this takes so long to cook, I usually make 4-6 at the same time.

Steps:
- Preheat oven to 350 degrees.
- Place corned beef on a rack in a pan, fat side up, and cover with tin foil.
- Cook for 3-4 hours.
- Mix yellow mustard and brown sugar in a bowl.
- Uncover corned beef.
- Score the top of the corned beef, and stick whole cloves in the top if desired.
- Baste with gingerale.
- Spoon mustard sauce on top and sides of beef.
- Place back in oven and cook for another ½ hour or so, until nicely browned and the meat is falling apart.

- Preheat the oven to 375 degrees F.
- In a large nonstick skillet, brown the ground beef with the onion and green pepper. Drain off any excess fat.
- Stir in the tomato sauce, chili powder, and garlic salt. Let simmer.
- Separate the biscuit dough into 10 biscuits; split each in half. Press 10 biscuit halves over the bottom of an ungreased 8-inch or 9-inch square baking pan.
- In a bowl, mix 1/2 cup of the cheese with the sour cream and egg.
- Remove the meat mixture from the heat and stir in the sour cream mixture. Spoon over the biscuit dough.
- Arrange the remaining biscuit halves on top. Sprinkle with the remaining 1 cup of cheese.
- Bake for 25 to 30 minutes, until golden brown.
VEGETABLE BEEF AND BISCUIT CASSEROLE

- In 10-inch skillet over medium-high heat, cook beef until browned, stirring to separate meat. Spoon off fat.
- Stir in soups, water, mixed vegetables and Worcestershire sauce. Spoon into 3-quart baking dish. Bake at 400 for 10 minutes or until hot and bubbling. Meanwhile, cut each biscuit into quarters.
- Remove dish from oven; stir. Arrange biscuits on hot beef mixture. Top with cheese. Bake 10 minutes or until biscuits are golden brown.
