ITALIAN SPRINKLE COOKIES
Of all the Italian cookie recipes I make, this is my favorite. These sprinkle cookies take some time, but, believe me, they are well worth it! My husband and I used to operate an Italian American restaurant, and this recipe goes back generations. -Gloria Cracchiolo, Newburgh, New York

Steps:
- Using a heavy-duty mixer, beat eggs on high speed until light and foamy, about 5 minutes; set aside. In a large bowl, combine the flour, confectioners' sugar and baking powder; on low speed, gradually beat in shortening and extracts until mixture resembles fine crumbs. Gradually add beaten eggs (dough will be stiff). , Roll dough into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 12-14 minutes (tops of the cookies will not brown, but bottoms should brown slightly). , Meanwhile, in a small bowl, combine the confectioners' sugar, milk and extracts until smooth. As soon as cookies are removed from the oven, quickly dip 2 or 3 at a time into glaze. Remove with a slotted spoon or tongs; place on wire racks to drain. Immediately top with sprinkles. Let dry for 24 hours before storing in airtight containers.

- Preheat oven to 350F and prepare a baking sheet lined with parchment paper or nonstick spray.
- Roll a piece of the dough into a ball, thats about the size of your inner palm. See picture above for details.
- Pour sprinkles into a bowl or plate. Gently take each ball and press lightly onto the sprinkles. Roll the cookie onto the sides to ensure sprinkles on all of the cookie.

- Chewy Double Chocolate Peppermint Cookies. Can we just agree that mint and chocolate should be acceptable year-round? The rich and almost bitterness of the chocolate combined with fresh mint extract shouldn’t be saved for the holidays.
- Pecan Pie Cookies. I have to admit that I actually prefer pecan pie over apple. There’s just something so satisfying about a slice of super sweet pie with crunchy toasted pecans.
- Mincemeat Cookies. Don’t worry, I haven’t lost it just yet. If you’ve never had a mince pie before, now is the time to try it! The filling is an incredible combination of currents, brandy, candied peel, and spiced apple.
- Cheese & Rosemary Biscuits. My love of shortbread extends beyond the sweet cookie you know and love. With no added sugar, this buttery biscuit has a pronounced cheese flavor, and the almost lemony rosemary will be such an unexpected treat.
- Jammy Coconut Mallows. These cute little sandwich cookies are made with a subtle vanilla biscuit, sweet raspberry jam, and squishy marshmallows. Chilling the dough before rolling makes the process a lot easier and less messy.
